SOUP - Borsch (by Charlotte Opper)

1. Melt butter. Sauté onions in butter in a skillet
- 4 tbsp butter
- 1 large onion, finely chopped
- 2 L chicken broth
- 4 large or 10 small beets, grated
- 1 1/2 cups carrots, sliced small
- 2 handfuls green beans, sliced small
- 1 1/2 cups diced small potatoes
- 1/2 head of cabbage/beet leaves, thinly chopped
- 6 springs fresh chopped dill
- Freshly ground pepper to taste
- Salt to taste
- 3/4 cup whipping cream
- 1 tbsp vinegar or more to taste
APPETIZER - Classic Lipton Onion Dip

Combine all ingredients. New Variations: CHEESY ONION DIP Add 1/2 cup grated cheddar cheese
- 1 pouch Lipton onion soup mix
- 1 container (500ml) sour cream
PASTA - Spaghetti Primavera

Melt butter in medium frypan
- 1/2 cup (125ml) butter
- 1 cup (250ml) sliced fresh mushrooms
- 1/2 cup (125ml) slivered green pepper
- 1/4 cup (50ml) chopped onion
- 1 clove garlic, crushed, chopped
- 1 cup (250ml) cooked cut-up broccoli
- 1 cup (250ml) diced seeded tomato
- 2 tbsp (30ml) chopped parsley
- 3/4 tsp (4ml) dried oregano leaves, crushed
- 6 ozs (170g) spaghetti or spaghettini (cooked, drained)
- Salt and pepper
- Grated parmesan cheese
BREAD - Stuffiing

In large bowl, combine brea cubes, parsley, poultry seasoning, sage, salt and pepper
- 6 cups fresh white bread cubes
- 1/4 cup chopped parsley
- 2 tsp poultry seasoning
- 2 tsp sage
- 1 tsp salt
- 1/2 tsp peper
- 1/4 cup butter/margarine
- 1 1/2 cups chopped celery
- 1/2 cup chopped onions
- 1 - 2 eggs
- 1/4 - 1/2 cup turkey neck broth

Directions 1. In a large saucepan or Dutch oven, saute the onion and garlic in oil until tender
- SAUCE:
- 1 large onion, chopped
- 2 clove garlic, minced
- 3 tbsp olive oil or canola oil
- 1 (28 ounce) can Unico crushed tomatoes
- 1 (28 ounce) can water
- 1 tsp sugar
- 1 tbsp dried oregano leaves
- 2 tbsp dried italiano spice
- 1 tsp basil leaves
- 1 tbsp crushed red pepper flakes or to taste (this might be a tad on the hot side)
- 1/4 tsp pepper
- 1/2 tsp seasoning salt
- MEATBALLS:
- 1 pound lean ground beef
- 5 eggs
- 1/2 cup cracker crumbs
- 1 tsp dried oregano leaves
- 2 tsp dried italiano spice
- 1 tsp crushed red pepper flakes or to taste (this might be a tad on the hot side)
- 1/4 tsp pepper
- 1 tsp seasoning salt

- 1/2 cup margarine
- 2/3 cup white sugar
- 2 eggs
- 2/3 cup rice flour

APPETIZER - Ham & Cheese Ball

Beat or mash ham and cream cheese together until blended
- 8 oz cream cheese
- 6 1/2 oz ham flakes
- 4 green onions
- 1 1/2 cups grated cheddar cheese

Cut out core. Cook cabbage and remove and save outside leaves of cabbage
- 1 medium cabbage
- 1 lb lean ground beef
- 1 cup cooked rice
- 1 or 2 onions
- 2 tbsp butter
- 1/2 lb bacon
- 1 green pepper

ENTREE - Teriyaki Beef Kabobs

Trim any excess fat from steak and cut into 1" cubes
