DESSERT - Apple Crisp

Mix brown sugar and butter
- 4 cups sliced apples
- 3/4 cups brown sugar (packed)
- 1/2 cup flour
- 1/2 cup oats
- 3/4 tsp cinnamon
- 3/4 tsp nutmeg
- 3/4 cup butter or margarine (soft)
ENTREE - Pineapple Lemon Chicken

Skin, debone and cut breast in 1/2" x 2 1/2" long strips
- 1 whole chicken breast (approximately 1 lb.)
- 1/2 tsp garlic salt
- dash white pepper to taste
- 1/4 tsp sesame seed oil
- 1 tbsp dry sherry
- 2 egg whites, lightly beaten
- 1/2 cup cornstarch
- oil for deep-frying
- Pineapple Lemon Sauce
- 2 tbsp fresh lemon juice
- 1 tsp lime juice (optional)
- 2 tsp orange juice
- 2 tbsp pineapple juice
- 2 tbsp wine vinegar
- 4 1/2 tbsp brown sugar
- 3/4 tbsp cornstarch in 4 tbsp water
- 1 tsp toasted sesame seeds
- few drops of yellow food colouring (optional)
SAUCES - Buffalo Chicken Dip

Mix ingredients in deep baking dish until smooth
- 8 oz cream cheese (softened)
- 2 c cooked chicken
- 1/2 c Buffalo Wing Sauce/extra hot Cayenne Pepper Sauce
- 1/2 c blue cheese salad dressing
- 1/2 crumbled blue cheese
- Assorted fresh vegetables and/or crackers for dipping
SALAD - Quinoa Greek Salad

• In a saucepan, bring stock to a boil
- 2 cups chicken stock
- 1 cup quinoa
- 1 ⁄2 cup red pepper, diced
- 1 ⁄2 cup green pepper, diced
- 1 ⁄2 cup cucumber, diced
- 1 ⁄4 cup green onion, diced
- 1 ⁄4 cup black olives
- 1 ⁄4 cup red onion, diced
- 3 oz reduced-fat feta cheese
- Dressing
- 1 ⁄4 cup lemon juice
- 2 tbls olive oil
- 1 tsp minced garlic
- 1 ⁄2 tsp basil
- 1 ⁄2 tsp oregano
- pepper
PASTA - Shrimp Rolls

Cook lasagne and shrimp according to package directions
- 4 Catelli Lasagne
- 12 oz frozen shrimp, shelled and deveined
- 1/4 c minced celery
- 1 tbsp butter or margarine
- 1/4 c flour
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 c chicken broth
- 3/4 c whipping cream
- 1 tsp lemon juice
ENTREE - Sweet & Sour Spareribs

Combine all ingredients and pour over spareribs
- 1 lb spareribs
- 1/2 c vinegar
- 1 1/4 c brown sugar
- 1 tsp mustard
- 2 c water
- 1 tsp lemon
- 1 tbsp soya sauce
- 1 tbsp worcestershire sauce
- 1/8 tsp salt
- 1/4 tsp pepper
VEGETABLES - The Ultimate Twice Baked Potatoes

1. Preheat oven to 350 degrees
- 4 large baking potatoes
- 8 slices bacon
- 1 cup sour cream
- 1/4 to 1/2 cup milk
- 4 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded Cheddar cheese, divided
- 8 green onions, sliced, divided
ENTREE - Sweet & Sour Pork

Marinate pork for 1/2 hour
- 1 lb boneless pork butt, 3/4" cubes
- 1/2 onion, 1" squares
- 1 green pepper, 1" squares
- 1 tomato, bite size chunks
- 1/2 small carrot, bite-size chunks
- 2 pineapple rings
- 6 - 8 pieces lychees (optional)
- oil for deep frying
- MARINADE
- 2/3 tsp salt
- 1/2 tsp ginger juice
- 1/2 tbsp wine
- BATTER MIX
- 3/4 c flour, 1/4 cornstarch
- 2 egg whites, lightly beaten
- 3/4 cup water
- SWEET & SOUR SAUCE
- 3 tbsp vinegar
- 3 tbsp brown sugar
- 2 tbsp catsup (optional)
- 3 tbsp pineapple juice
- 3 1/2 tbsp water
- 1 tsp cornstarch in 1 tsp water
- 1/4 tsp soya sauce
- 1/4 tsp Worcestershire sauce
- 1 clove garlic, finely chopped
- 1/2 tsp oil
- dash of tabasco sauce (optional)
ENTREE - Dry Ribs from the Keg

Mix first five ingredients
- 2 tbsp seasoning salt
- 1 1/4 tbsp garlic powder
- 2 tsp oregano
- 2 tsp mustard powder
- 2 tsp black pepper
- 4 lbs pork or beef ribs
ENTREE - Chili Con Carne

In large skillet, cook and stir meat, onion and green pepper until meat is brown and onion is tender
- 1 lb ground beef
- 1 c chopped onion
- 1 c chopped green pepper
- 28 oz tomatoes
- 8 oz tomato sauce
- 2 tsp chili powder
- 1 tsp salt
- 1/8 tsp cayenne red pepper
- 1/8 tsp paprika
- 15 1/2 oz kidney beans, drained
