BRAISED BEEF WITH TOMATOES AND HERBS

1. Trim the meat of all fat, and sprinkle the cubes with salt and pepper to taste
- 3 lb. lean chunk steak, cut into 1 1/2 inch cubes
- Salt and freshly ground pepper
- 1/2 lb. whole mushrooms
- 2 tbsp. finely chopped garlic
- 1/2 lb. onions, cut into 1 inch cubes
- 1/4 c. flour
- 1 c. dry red wine
- 2 c. canned imported tomatoes, cut in half if large
- 3 tbsp. olive oil
- 24 pitted, stuffed green olives
- 1 bay leaf
- 1/2 tsp. dried thyme
- Pinch of cayenne pepper
- 1/2 tsp. stem saffron, optional
- 1/4 c. finely chopped parsley
Leftover steak or roast makes for a tasty stew

- 2 tablespoons (30 ml) butter
- 2 tablespoons (30 ml) olive oil
- Half a large onion, finely chopped
- 2 large garlic cloves, finely chopped
- 1 cup (250 ml) chopped tomatoes
- Half a cup (125 ml) white wine
- 1 bay leaf
- Half a teaspoon (2 ml) paprika
- 1 and half cup (375 ml) frozen peas
- 1 cup (250 ml) water
- 15 small round white potatoes
- 1 sweet potato, peeled and cut into bite-sized pieces
- 2 tablespoons (30 ml) butter, second amount
- 2 leftover barbecued steaks, chopped
- Salt and pepper to taste
- 3 ounces of smoked bacon, salt and cured bacon fat
Prime Rib with Roasted Vegetables

This meal is delicious, break out the red wine
- 2 - 2 1/2 - lb prime rib roast
- Olive oil
- 1 TBSP Montreal steak spice
- Assorted vegetables (potatoes, carrots, parsnips etc. cut in chunks)
- 1/2 cup mayonnaise or sour cream
- 1 TBSP Dijon mustard
- 1 tsp minced garlic and dried thyme

This dish was inspired by a meal my girlfriend ordered during a girl's night out
- For the turkey zucchini burgers:
- 1/4 cup chopped red onion
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- kosher salt and fresh cracked pepper to taste
- 3 medium vine ripe tomatoes
- 2 small cloves garlic, minced
- 2 tbsp fresh basil leaves, chopped
- 3 oz part skim mozzarella, diced
- 1.25 lbs 93% lean ground turkey
- 1 small zucchini, grated (1 cup, or 5 oz)
- 1/4 cup seasoned whole wheat breadcrumbs
- 1 clove garlic, grated
- 1 tbsp red onion, grated
- salt and fresh pepper
- oil spray
- For serving:
- 2 medium tomatoes, sliced into 10 thin slices
- 4 loose cups baby arugula
Twice-Cooked Apricot Ribs

This is another good rib recipe that my family loves
- 5 lb of pork side or back ribs
- 3/4 cup apricot nectar or juice
- 1/4 cup sodium reduced soy sauce
- 1/4 cup tomato paste
- 3 Tbsp packed dark brown sugar
- 3 Tbsp rice vinegar or white wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp each chili powder and ground ginger
- 1/3 cup apricot jam

- 1 1/2 to 2 cups diced cooked beef

- 2 fresh thyme sprigs
- 1 pkg (340 g) mixed fresh mushrooms , sliced1
- 1/2 tsp salt

- 1/2 cup sodium-reduced chicken broth
- 1 bunch Swiss chard , stemmed and leaves cut in thirds1
- 3/4 cup whipping cream

- 1 2 - 2 1/4 pound cooked roasted chicken (from deli)
- 8 8 - 10 inches flour tortillas
- 1/2 cup hoisin sauce
- 1/4 cup finely chopped peanuts
