Bring Quinoa, water, garlic, carrots, leeks, peas and parsley to a boil in a pot
- 1 cups Quinoa, organic
- 2 cups water
- 1/2 cup frozen or fresh green peas
- 1 medium leeks, sliced
- 4 medium carrots, sliced
- 1/4 cup parsley, finely chopped
- 2 cloves garlic, minced
- Celtic sea salt to taste.

Heat oven to 350F. In bowl, combine first 6 ingredients, 1 Tbsp lime juice and 1/2 tsp lime zest

- 4 Tbsp vegetable oil
- 2 Tbsp minced fresh parsley
- 1 Tbsp each minced garlic, grated fresh ginger root and dry jerk seasoning blend

- 4 Tbsp butter
- 2 cooking apples (Fuji or Jonagold are perfect for this dish, do NOT use a red delicious), cored and sliced into wedges (you can peel or not)
- Flour for dredging
- 4 whole chicken legs (with thighs)
- Salt
- 1 large onion, peeled, sliced lengthwise (root to top) into wedges
- 1/2 cup brandy (apple brandy or Calvados if you have it)
