Crispy, Crunchy, Creamy Tex-Mex Coleslaw

I can never have enough coleslaw and I am always looking for variations on standard versions
- Mayonnaise - 1 cup
- Sour Cream - 1/2 cup
- Lime Juice - 1 Tblsp. (from 1/2 a lime)
- Apple Cider Vinegar - 1 Tblsp. (use 2 Tblsp if you like it super-tangy)
- Cilantro - 1 handful of leaves, chopped finely
- Garden onions - 8, sliced thin
- Salt and pepper to taste
- Cabbage - 1 small to medium head, sliced very thin, green or red.
- Carrot - 2-3 medium to large, shredded (1 cup)
- Yellow Bell Pepper -1, sliced thin, about 2 inches long (you can use any color bell peppers)
- Red Bell Pepper - 1, sliced thin, about 2 inches long (you can use any color bell peppers)
- Jalepeno Pepper - 1, chopped small (optional)
Big Batch Barbecue Pork

Everyone will love these irresistible, saucy pork chops
- Bone-in pork chops, trimmed of fat 25 25
- Medium onions, sliced into rings 3 3
- BIG BATCH BBQ SAUCE
- Tomato juice 4 cups 1 L
- Finely chopped onion 1 cup 250 mL
- White vinegar 1/4 cup 60 mL
- Worcestershire sauce 2 tbsp. 30 mL
- Brown sugar, packed 1 tbsp. 15 mL
- Dry mustard 2 tsp. 10 mL
- Chili powder 1 tsp. 5 mL
- Salt 1 tsp. 5 mL
- Pepper 1/2 tsp. 2 mL
Grilled pears with melted Havarti and almonds

Preheat grill to medium. Cut pears in half and remove core
- 6 fresh pears
- 1/3 cup (80 ml) brown sugar
- 1/2 cup (125 ml) coarsely chopped almonds
- 1 tbsp (15 ml) canola oil
- 7 oz (200 g) Canadian Havarti, sliced
- OPTIONAL: honey or maple syrup
Bean-Stuffed Peppers

- Can of black beans, rinsed and drained 19 oz. 540 mL
- Cooked rice (about 1/3 cup, 75 mL, 1 cup 250 mL

- Salt, sprinkle
- Pepper, sprinkle
- Large red (or green) peppers, quartered 3 3
- lengthwise, seeds and ribs removed
- Prepared chicken broth 1/3 cup 75 mL
- Coarsely crushed tortilla chips 1 cup 250 mL
- Grated sharp Cheddar cheese 1 cup 250mL

- Half a cup (125ml) white wine, water or broth
- 2 Tbsp (30 ml) tomato paste
- 1 green and 1 red pepper, chopped coarsely
- 1 med eggplant
- 2 small zucchini
- 1 can of diced tomatoes (28 0z or 798ml)
- Handful of black olives
- Large pinch of thyme
- 6 leaves fresh basil, torn into pieces

- 1 can of either cream of mushroom, chicken or celery soup, thinned with 1/4 cup milk
