Peanut Butter Bars

Beat peanut butter, butter, and vanilla
- 1 cup crunchy peanut butter
- 2/3 cup butter
- 1 tsp. vanilla
- 2 cups firmly packed light brown sugar
- 3 eggs
- 1 cup sifted flour
- ½ tsp. salt

- ¾ cup sifted icing sugar
- 2 tsp. water
- ¼ cup chocolate chips
- 1 tsp. shortening
Sesame Miso Pork

Slice pork into lengths 7-10 cm and marinate in soy sauce and sake for 30 minutes
- Sauce:
- 3/4 lb thinly sliced pork
- 1/2 tsp soy sauce
- 1 tbsp sake
- cornstarch as needed
- vegetable oil as needed
- sesame seeds as needed

- 1/2 tsp soy sauce
- 2 tbsp sake
- 2 tbp sesame paste
- 1 tbsp miso
- 2 tsp sugar
- 1 tsp sesame oil
- 2 tbsp mirin
- 1 clove garlic, minced
- 3 cm piece of ginger, peeled and grated
- 3 stalks green onion, chopped
- 1 tsp tobanjan
Squid with Edamame

Whisk together the ingredients for one of the mayo sauces
- 1/4 cup sake
- 1 lb cleaned squid cut into rings
- 2 tbsp oil
- 2 cups shelled edamame
- Soy Sauce Mayo
- 1/4 cup mayo
- 2 tsp soy sauce
- Ginger Mayo
- 1/4 cup mayo
- 2 tsp cream
- 1 tsp peeled and grated ginger
- salt to taste
Chicken Kara-age

Shake together marinade ingredients in a plastic bag until sugar is dissolved
- Marinade:
- 1 lb boneless, skin-on chicken thighs cut into 1-in pieces
- 1 cup potato starch
- 1/2 cup sesame seeds
- Oil for deep frying
- Lemon wedges for garnish
- 3 tbsp soy sauce
- 2 cloves garlic, grated
- 1 1/2 tbsp sugar
- 1 tbsp sake
- 1 tbsp rice vinegar
- 1 tbsp ginger juice
Futomaki

- Dashi:
- 1 pkg (1 tbsp) Hon Dashi
- 4 cups boiling water
- ¼ cup soy sauce
- ¾ tsp. ajinomoto (MSG)
- 1 tsp. salt
- ½ cup sugar
- Shiitake mushrooms
- Kanpyo
- Carrot
- Celery
Peanut Miso Sauce

- 2 tbsp peanuts
- 1/2 cup sweet white miso
- 2 tbsp. sake
- 2 tbsp. brown sugar
- 2 tsp. light soy sauce

StIn a large mixing bowl, combine butter, sugars, vanilla, and salt
- 1/2 cup unsalted butter
- 1 egg
- 3/4 cup packed brown sugar
- 1/2 tsp. baking soda
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp. vanilla
- 3/4 cup coarsely chopped unsalted roasted peanuts
- 1/4 tsp. salt
- 12 oz. coarsely chopped semi-sweet chocolate
