Japanese seasonings
- 1 garlic clove
- 4 spring onions, chopped
- 1 pound 2 ounces (500 grams) crabmeat
- 3 teaspoons Japanese wasabi
- 2 teaspoons rice vinegar
- 2 teaspoons tamari or Japanese soy sauce
- 4 ounces (100 grams) brown rice flour
- Groundnut or other vegetable oil, for frying
- Limes sliced into segments, to garnish
Herb-marinated Pork Tenderloin

- 1 lemon, zest grated
- 3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
- Good olive oil
- 2 tablespoons minced garlic (6 cloves)
- 1 1/2 tablespoons minced fresh rosemary leaves
- 1 tablespoon chopped fresh thyme leaves
- 2 teaspoons Dijon mustard
- Kosher salt
- 3 pork tenderloins (about 1 pound each)

- For the Dim Sum Dipper:
- 1 pound Medium Shrimp (peeled and deveined)
- 2 Large Eggs
- 1/2 cup Unsalted Butter (chilled and diced)
- 1 tsp Truffle Oil (optional)
- 16 Thin Square Wonton Wrappers
- 1 Bunch Scallions (white and green parts separated and thinly sliced - set 2 tbsp aside for garnish)

- 4 tbsp Canola Oil
- Sea Salt and Ground White Pepper

Heat wok and add 2 tbsp. oil
- 10 oysters
- 1 onion, chopped
- 3 green onions, cut in 1" lengths

1. Preheat barbeque to medium high or ven to 425 degrees
- 6 medium whole fresh beets
- 12 shallots, peeled
- 15 ml olive oil
- 10 ml thyme
- 3 ml balsamic vinegar

Ham and Cheese Mini Frittatas

Uses Swiss cheese
- 1/4 pound deli sliced Swiss cheese, finely chopped
- 6 slices Canadian bacon, finely chopped
- 3 tablespoons snipped or chopped chives
- A few grinds black pepper
- 8 eggs, or 1 pint egg beaters
- 2 tablespoons melted butter

Stir sugar into 1/2 cup warm water until dissolved and sprinkle yeast over top
- 1/2 cup warm water
- 1 tsp sugar
- 1 pkg yeast
- 2 cups flour
- 1 tsp salt
- 2 tbsp vegetable oil
- 1/3 cup warm water
Grilled Halibut with Bourbon Marinade

Combine the whiskey, soy sauce, brown sugar, ginger, pepper, garlic, chili powder and salt in a bowl
- Marinade:
- 1 cup Jack Daniels or your favourite bourbon
- 1 cup Soy sauce
- ¼ cup Brown sugar
- 1/3 cup fresh ginger shredded
- 2 tbsp Black peppercorns
- 1 tbsp Fresh garlic - minced
- 1 tsp Chili powder
- ½ tsp Sea salt
- ¼ cup Toasted sesame oil
- ½-1/3 cup Olive oil

Boil water and seasonings
- Soak shiitake in water for 1/2 hr. Squeeze out water, remove stem.
- Kampyo: Rub in salt, soak in water for 10 minutes anf wash off.

- 1/4 cup soy sauce
- 3/4 tsp ajinomoto
- 1 tsp salt
- 1/2 cup sugar
