Banana Bread

Preheat oven to 350 F. Cream butter and sugar together
- ½ cup butter or margarine
- 1 cup sugar
- 2 eggs
- 1-cup very ripe bananas (about 3), mashed
- 1 ¾ cup all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
Italian Zucchini Boats

Cut each zucchini in half and scoop out flesh
- 6 zucchini
- 2 cups dry bread crumbs
- 2 eggs, lightly beaten
- 1 large tomato, diced
- 1/3 cup grated Parmesan or Romano cheese
- 1/3 cup minced fresh parsley
- 2 cloves garlic, minced
- ½ cup chicken broth
- ½ tsp salt
- 1/8 tsp pepper
Fukujinzuke

Salt chopped veggies and let sit overnight
- 5 cups chopped cucumber
- 5 cups chopped daikon
- 1 cup chopped carrot
- 1 cup chopped ginger
- 1/4 cup salt
- 3 cups sugar
- 3 cups shoyu

Mix karinto ingredients and let stand for a few minutes
- Seasoning:
- 2 tbsp. yeast
- 1 tsp. sugar
- 2 cups warm water
- 6 cups flour

Braised Fish

Clean fish and pat dry. Score on each side
- 1 whole white fish
- 1/2 tsp. salt
- 3 tbsp. cornstarch
- Seasoning Sauce
- 1 tbsp. rice wine
- 1 1/2 tsp. soy sauce
- 1/4 cup sugar
- 1/4 cup rice wine vinegar
- 1/4 cup ketchup
- 1 tbsp. cornstarch
- 1/4 tsp. salt
- 2 tbsp. chicken broth
- 6 tbsp. water
- Tomato Sauce
- 2 tbsp. vegetable oil
- 1/4 cup diced onion
- 1 small tomato, peeled and diced
- 1/4 cup diced mushrooms
- 1/4 diced carrot
- 1/4 thawed frozen peas
Grilled Halloumi Cheese with Walnut Salsa

Heat grill to high. Combine all ingredients for salsa
- 3 slices Halloumi cheese 1" thick
- 200 g ripe tomatoes, sliced
- 25 g red onion, finely diced
- 1 tsp cumin seeds
- 2 garlic cloves, pressed
- 1 Jalapeno, seeded and minced
- 40 g walnuts, roasted and coarsely chopped
- 1/2 lemon
- 50 mL pomegraate molaseses
- 1 tsp chili flakes
- 5 g cilantro, coarsely chopped
- 5 g mint, coarsely chopped
- 30 mL olive oil, plus to drizzle
Artichoke Dip

Saute bacon, onion, and garlice until bacon is done and onion is soft
- 8 slices bacon, diced
- 1 cup finely chopped onion
- 2 cloves garlic, minced
- 398 mL (14 oz) artichoke hearst, drained and chopped
- 8 oz cream cheese
- 1/2 cup sour cream
- 1 bunch of fresh spinach, finely chopped
- 1/4 tsp Worcestershire sauce

- 1/8 lb butter
- 3/4 c sugar
- 1 egg
- 1/4 c evaporated milk
- 1 1/2 c flour
- 1 tsp baking powder

Caramelized Shrimp

Rub the shrimp with salt and let stand 10 minutes
- Sauce:
- 7 oz (200 g) shrimp with shells on
- 1 tsp salt
- 4 cloves garlic, minced
- 1 tbsp minced ginger
- 3 scallions, chopped coarsely
- 2 cups oil
- 1 tsp cornstarch
- 2 tbsp soy sauce
- 2 tsp sugar
- 1 tbsp dry sherry
- 1/4 tsp fivve-spice powder
- 1 tbsp ketchup
