- 6 oz white baking chocolate
- 6 Tbl butter
- 1/4 cup cocoa powder
- 1/2 cup sugar
- 2 eggs, lightly beaten
- 1 Tbl orange extract
- 2 teaspoons red food coloring
- 1/2 cup all purpose flour
- 1 pinch salt - I use table salt for this, only a touch, for the finer grain
- 1 Tbl butter - for the ramekins

- 3 tablespoons olive oil
- 2 large carrots, peeled and sliced diagonally
- 1 cup bite-size broccoli pieces
- 1 whole red bell pepper, seeded and sliced into strips
- 2 tablespoons butter
- 4 ounces white mushrooms, washed and sliced
- 2 medium zucchini, sliced diagonally
- 1 medium summer squash, sliced diagonally
- 4 cloves garlic, minced
- 1/2 large onion, diced
- 1/2 cup chicken broth
- 1/4 cup white wine
- 1/2 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan, plus more for serving
- Salt and freshly ground black pepper
- 1/2 cup frozen peas
- 12 whole fresh basil leaves, chopped, plus more for serving

- 5 cups finely chopped yellow onion (3 to 4 medium onions)
- 1 teaspoon kosher salt, plus more to taste
- 1 tablespoon minced garlic (1 large clove)
- 1/4 cup finely chopped cilantro
- Zest of 1/2 lime
- 1 tablespoon, plus 1 teaspoon, fresh lime juice (1 lime)

Heat the oven to 350°F. Lightly grease a 13x9" baking dish with baking spray or olive oil
- 4 slices thick bacon, cut into strips about 1/2-inch wide
- 1 large yellow onion, peeled and diced
- 1 yellow bell pepper, cleaned out and diced
- 4 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 2 teaspoons salt, divided
- 8 large eggs
- 1 cup milk, fat content between 1% and 4% (whole)
- 1 teaspoon fresh-cracked black pepper
- 2 cups shredded cheddar cheese
- 3 cups frozen diced potatoes, unthawed
