Creamy Onion Soup

In a large, heavy pot over medium heat, bring 2 quarts water to a boil
- 2 quarts water, plus 1/2 cup cold water
- 8 cubes beef bouillon, crumbled
- 2 large onions, quartered and sliced
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper
- 3/4 cup all-purpose flour
- 1 cup heavy cream
- 1 1/2 cups shredded Monterey Jack cheese
- Croutons (optional)
New Mexico Style Enchiladas

Heat the oil in a large skillet over medium heat
- 1 tablespoon vegetable oil
- 2 pounds skinless, boneless chicken breast halves cut into 1-inch pieces
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1 (19-ounce) can red enchilada sauce
- 2 cups shredded iceberg lettuce
- 2 cups shredded Colby cheese
- 1 (12-ounce) package corn tortillas
- 1 onion, chopped
- 1/2 cup sour cream
- 6 fried eggs
Stuffed Zucchini with Garlic Bread

Preheat oven to 350F. Cut off stem and bottom of each zucchini
- 4 medium zucchinis, about 2 pounds
- 1 pound ground beef
- 1/2 yellow onion, chopped
- 2 garlic cloves, crushed
- 1 (15 oz.) can diced tomatoes, drained
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 4 slices whole wheat bread
- 2 tablespoons butter
- 1 teaspoon garlic salt

- 1 1/2 teaspoons vanilla extract
- 2 (8-ounce) cans crescent roll dough

- 7 T. sugar
- 6 T. strong coffee
- 2 shots rum

- 6-8 lb. beef brisket
- 10-14 large garlic cloves
- 2 tsp. dry mustard
- 1 T paprika
- 1 1/2 t. salt
- 1 t. pepper
- 1/2 large onion, chopped
- 1 pkg. Lipton onion soup mix
- 2 cans beef broth
- 1 cup water
- 1/2 to 3/4 cup tomato paste
- 1 bottle of Escofier Sauce Diable
- 2 kg. cooked carrots
- 4 T. vermouth
- 3 T. butter
- Sauce Diable:
- 1 shallot minced
- 1 cup dry white wine
- 1 sprig thyme
- 1 bay leaf
- 1/2 tsp. dry mustard
- 2 T. tomato paste
- 1 1/2 cup demi-glaze (wm. sonoma)
- 1 T. lemon juice
- 1/2 t. pepper
- 1/4 t. cayenne pepper
- Caramelized Onions:
- 4 med onions
- 3 T. unsalted butter
- 1 t. sugar
- salt and pepper

- 1 ! lbs boneless chicken breasts or tenders
- 1/2 t dried thyme
- 1 T olive oil
- 1/2 c diced onions
- 6 oz pre-sliced baby portabella mushrooms
- 1/4 cup Marsala wine
- 1/2 cup chicken broth
- 1 pkt mushroom gravy mix
- Egg Noodles
- Butter
- Salt
