Nut Pie

Beat whites until stiff. Fold in sugar, crumbs, baking powder, nuts and vanilla

- 1 cup sugar
- 10 graham crackers, crushed
- 1/2 t. baking powder
- 1 cup chopped nuts
- 1 t. vanilla
Turkey Burgers

Preheat grill on high. In a large bowl, mix together all of the ingredients, using your clean hands
- Turkey Burgers
- 1 pound ground turkey
- 1 tablespoon garlic powder
- 1 tablespoon red pepper flakes
- 1 teaspoon dried minced onion
- 1 egg
- 1/2 cup crushed crackers*
Taco Stuffed Peppers

Directions: Cut off the top and remove the seeds from each pepper
- 6-8 Medium/Large Bell Peppers - ensure they have a flat base so they will stand up when cooking
- 1 lb Ground Beef
- 1 Medium Yellow Onion - Diced
- 1 Can Black Beans - Drained
- 1 Cup Cooked Brown Rice
- 1 Cup Frozen Corn
- 1 Jar Medium Chunky Salsa
- 1 Packet (about 2 Tbsp.) of Taco Seasoning Mix*
- 1 1/2 - 2 Cups Grated Cheddar/Mexican Blend Cheese
- Optional: Guacamole and Sour Cream to finish
- To make your own Taco Seasoning at home: (note: makes more than needed for this recipe)
- 1 Tbsp. Chili Powder
- 1 1/2 tsp Ground Cumin
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Corn Starch
- 1/2 tsp Paprika
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Cayenne Pepper
- 1/4 tsp Oregano
Spagetti with Fried Eggs

1. Bring a pot of salted water to the boil
- * Salt
- 1/2 * 1/2 pound thin spaghetti
- 6 * 6 tablespoons extra virgin olive oil or lard
- 2 * 2 large cloves garlic, lightly smashed and peeled
- 4 * 4 eggs
- * Freshly ground black pepper
- * Freshly grated Parmesan or pecorino cheese, optional
All-Purpose Barbecue Rub

- 1 egg, beaten
- 1/3 cup milk
- 1/2 cup old-fashioned oats
- 1/2 teaspoon salt

- 2 tablespoons brown sugar

- 2 tablespoons butter, softened
- 1 egg

- 2 teaspoons sesame seeds
- Filling:
- 1/2 cup creamy Italian salad dressing
- 6 to 8 lettuce leaves
- 1/2 cucumber, sliced thinly
- 1/2 green bell pepper, sliced thinly
- 2 red onion slices, separated into rings
- 4 slices American cheese
- 4 ounces salami, thinly sliced
- 4 ounces cooked ham, thinly sliced
- 1 medium tomato, sliced
