- 2 * 2 butternut squash
- 2 * 2 tablespoon olive oil
- 10 * 10 ounces baby button mushrooms
- 2 * 2 garlic cloves, crushed
- * Juice of 1/2 lemon
- 2 * 2 tablespoon olive oil
- * Seasoning
Roasted Beet Salad with Walnuts and Goat Cheese

1. Preheat the oven to 350 F
- 1/2 cup walnut halves
- 2 teaspoons olive oil
- 1/8 teaspoon kosher salt
- 1/2 teaspoon fresh ground black pepper
- 6 medium beets, trimmed and washed
- 1/3 cup thinly sliced red onions
- 6 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 3/4 teaspoon salt
- 1/4 teaspoon sugar
- fresh ground black pepper
- 1/2 lb fresh spinach leaves, de-stemmed and washed
- 3 ounces fresh goat cheese, crumbled
Manwich Dip

Brown meat, drain and place in crock pot with sauce and cook on high for 1 hour
- 3 lbs. ground beef
- 3 cans (15.5 oz) Manwich original sloopy Joe sauce
- corn chips
- shredded cheddar cheese
- sour cream
- 1 bunch sliced green onions
Cider Glazed Salmon

Whisk cider and honey together in a pan, bring to boil, stirring until reduced to 3T
- 4 , 5oz. Salmon fillets
- 3/4 cup cider
- 1 T. Honey
- 1 t. chopped Rosemary
- 1 t. minced garlic
- 1 T. Dijon mustard
- 1/2 t. Kosher salt
Tommy Bahama Pineapple UpsideDown Cheesecake

Cheesecake: Combine cream cheese, sugar and the butter in mixer bowl
- Cheesecake:
- 2 1⁄2 lb Cream Cheese, room temp
- 8 oz Granulated Sugar
- 2 oz Unsalted Butter
- 4 Whole Eggs
- 1 Cup Sour Cream
- 1 1⁄2 Tbsp Lemon Zest, chopped
- 1 1/2 Tbsp Pure Vanilla Extract
- 8 mini-springform pans, or use ramekins
- Caramelized Pineapple
- 2 Cups fresh Pineapple, diced, 1⁄2" (reserve the pineapple top for garnish)
- 1 ⁄2 Cup Light Brown Sugar
- 1 ⁄2 tsp Pure Vanilla Extract
- Caramel Sauce
- 1 ⁄4 cup Unsalted Butter
- 11 ⁄2 Cups Granulated Sugar
- 1 Cup Heavy Whipping Cream
