Green Salad with Autumn Fruit

- Add to fruit along with any of the following:
- 1-2 pears or tart apples (thinly sliced)
- 2 TBSP lemon juice
- toss together in a medium bowl
- 6-8 cups lettuce or mixed greens (torn)
- 1/4-1/2 cup cheese (crumbled or shredded: Blue Gorgonzola, feta Parmesan, Asiago, or Gouda
- 1/2 cup cranberries
- 1/2 cup walnuts, hazelnuts, or almonds (coarsely chopped and toasted, or caramelized, see below)
- 1/3 cup oil
- 1 Tbsp Dijon Mustard
- 1 Tbsp sugar
- 1 Tbsp lemon juice
- 1/2 tsp. salt
- 1/2 tsp. pepper
- Shake together in jar with a tight lid (or use another favorite poppy seed dressing or vinaigrette). Add dressing to salad and toss gently or arrange on individual serving plates.
- Caramelized nuts:
- 1/2 cup walnuts or almonds
- 1-2 Tbsp. Corn syrup
- 1-2 Tbsp. sugar
- Mix together and toast in oven at 350 degrees until sugar begins to melt and nuts are toasted and coated. Watch carefully to avoid burning.
Vanilla Belgian Waffles

- 2 c. flour
- 1T. b. powder
- 1T. sugar
- pinch of salt
- 3 large eggs
- 1 stick butter, melted
- 1 1/2 c. whole milk
- 1 T. pure vanilla extract
Sourdough Pizza Crust

1) Stir any liquid into the sourdough starter, and spoon 1 cup starter into a mixing bowl
- 1 cup sourdough starter, unfed (straight from the fridge) : 1
- 1/2 cup hot tap water: 1
- 2 1/2 cups King Arthur Unbleached All-Purpose Flour: 1
- 1 teaspoon salt: 1
- 1/2 teaspoon instant yeast: 1
- 4 teaspoons Pizza Dough Flavor, optional but delicious: 1
Salisbury Steak

Combine: ¼ c. soup, ground beef, breadcrumbs, salt, pepper, onion, egg Shape into patties
- 1 can golden mushroom soup
- 1-1/2 pounds ground beef
- 1/2 cup dry bread or cracker crumbs
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 onion finely chopped
- 1 egg, slightly beaten
- 1/3 c. water
Hot Hoagies

Combine butter and salad dressing mix
- Optional toppings:
- 3/4 cup butter or margarine, softened
- 1 envelope Italian dressing mix
- 6 Hoagie buns, split
- 12-16 oz. luncheon meat (salami, ham, turkey)
- 12 thin slices of cheese (swiss)
- Shredded lettuce
- tomato
- pickles
- jalapenos
- black olives
Raspberry-Peach Jam-CERTO®

BRING boiling-water canner, half full with water, to simmer
- 4 cups prepared fruit (buy about 1-1/2 pt. fully ripe red raspberries and about 1-1/2 lb. fully ripe peaches)
- 1/4 cup fresh lemon juice
- 6-1/4 cups sugar, measured into separate bowl
- 1/2 tsp. butter or margarine
- 1 pouch CERTO Fruit Pectin
Chocolate Dipped Shortbread Cookies

1. Heat oven to 350 degree
- 1 cup butter or margarine, softened
- 3/4 cup powdered sugar
- 1 tsp. vanilla
- 2 1/2 cups All purpose flour
- 1 cup semi sweet chocolate chips
- 2 tsp. shortening
Cincinnati chili

- Toppings:
- 1 1/2 to 2 pounds of lean ground beef
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 46 oz. tomato juice (or you can use one 6 oz. can tomato paste as base and add water to make up difference)
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. cinnamon
- 1 tsp. cayenne (or less if desired)
- 1 tsp. black pepper
- 1 tsp. cumin
- 1 1/2 tsp. vinegar
- 2 Tbsp. chili powder
- 2 dashes of Worcestershire sauce
- 5 bay leaves
- 1 pound of spaghetti, cooked just before ready to serve
- 4-6 cups of cheddar cheese
- 1 onion, chopped
- 1 can kidney beans, drained and rinsed
- oyster crackers if desired or crushed saltines works just as well in a pinch

- 1 tsp. soda
- 1/2 cup buttermilk

- 6 Tbsp. milk
- 1 box powdered sugar (1 pound)

Vanilla Butter Cream Frosting

Classic American Buttercream frosting
- 1 cup unsalted butter (2 sticks or 1/2 pound), softened (but not melted!) Ideal texture should be like ice cream.
- 3-4 cups confectioners (powdered) sugar, SIFTED
- 1/4 teaspoon table salt
- 1 tablespoon vanilla extract
- up to 4 tablespoons milk or heavy cream
