Chicken Tortilla Soup

A very hearty soup. This is Joah's favorite soup, especially if I serve it with homemade bread bowls
- 2 large chicken breasts (I cook chicken ahead of time in crockpot and freeze it shredded just for this soup.
- 1 large can chicken broth (I make my own by using boullin cubes)
- 1 large can beef broth (I make my own by using boullion cubes)
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 jalapeno pepper, seeded and minced (I never use this)
- 2 cloves garlic, minced or pressed
- 1 Tbsp. olive oil
- 1 large can diced tomatoes
- 1 can Rotel tomatoes and green chilies, diced
- 1 can whole corn (I use frozen)
- 1 small can tomato paste
- 1 can tomato sauce
- 1 tsp. cumin
- 1 tsp chili powder
- 1 tsp. oregano
- 1 tsp. salt
- 1/2 tsp. lemon pepper seasoning
- 2 tsp. Worcestershire sauce
- Toppings: chopped green onion, crushed tortilla chips, 1 cup grated cheddar cheese, and/or sour cream
Ramen Noodle Leaf Salad

A wonderful full flavor salad
- Salad:
- 1 large head of broccoli
- 2 large Romaine hearts
- 5 T. green onions
- Topping:
- 1/2 cup margarine
- 1/2 cup sunflower seeds
- 1 pkg. Ramen Noodles, broken
- 3/4 cup slivered almonds
- Dressing:
- 1/2 cup salad oil
- 1/2 cup sugar
- 1/4 cup vinegar
- 2 tsp. soy sauce
Brownie Goody Bars

A great recipe, used at our coffee connection as a sweet treat
- 1 box (1 pound, 6.5 oz.) Betty Crocker Original Supreme Brownie mix.
- Water, oil and eggs called for on brownie mix box
- 1 container (1 pound) Betty Crocker Rich and Creamy Vanilly frosting
- 3/4 cup salted peanuts, coarsely chopped
- 3 cups crisp rice cereal
- 1 cup creamy peanut butter
- 1 bag (12 oz.) semisweet chocolate chips (2 cups)
Sizzling Beef Kabobs

In a large resealable plastic bag, combine the oil, soy sauce, vinegar and garlic powder; add beef
- 1/3 cup canola oil
- 1/4 cup soy sauce
- 2 tablespoons red wine vinegar
- 2 teaspoons garlic powder
- 2 pounds beef top sirloin steak, cut into 1-inch pieces
- 2 medium yellow summer squash, cut into 1/2-inch slices
- 1 large onion, cut into 1-inch chunks
- 1 large green pepper, cut into 1-inch pieces
- 1 large sweet red pepper, cut into 1-inch pieces
Sweet Revenge's Pure Cupcakes

Made as a cupcake at my MOPS baby shower for Liam
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 cups sugar
- 5 extra large eggs - large works also.
- 3 cups self rising cake flour
- 1 cup buttermilk
- 3 Tbsp. mexican vanilla (I used madagascare vanilla)
- Sweet Revenge "Pure" buttercream
- Turbinado or demerara sugar for sprinkling
Italian Sausage Side by Side Calzones

1. Preheat oven to 400 degrees
- 1/2 cup onion
- 1 pound hot turkey Itallian sausage (about 4 links)
- 1/2 cup diced green pepper
- 1/2 cup pitted ripe olives, sliced
- 1 can (8 ounces) pizza sauce
- 1 garlic clove, presssed
- 2 packages (13.8 oz. ) refrigerated pizza crust
- 1 cup (4 oz) shredded mozzarella cheese
- 1 Tbsp. basil oil
- 1/4 cup (1 oz) grated fresh Parmesan cheese
Blueberry Coffee Cake

- Glaze:
- 2 cups flour
- 3/4 cup sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup butter
- 2 eggs, beaten
- 1/2 cup OJ

- 1-2 cups blueberries, divided

- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 1 egg
- 1 cup sour cream
- 2 cups flour
- 2 tsp. soda
- 2 tsp. cinnamon

- 4 cups apples, finely chopped (McIntosh or Jonathon)

Beach Bar Tomato Soup

- 1/2 stick butter
- 1 medium onion, diced fine
- 1 block cream cheese
- 1 large can petite diced tomatoes
- 6 cans condensed tomato soup
- 1 quart milk or half and half
- Croutons and mozzarella cheese for garnish
Chile-Rubbed Grilled Chicken With Salsa

- 1 tablespoon extra-virgin olive oil, plus more for brushing
