Beef: Sweet and Sour Meatballs

Combine first 2 ingredients, mix well
- 1 lb hot bulk pork sausage
- 1 lb mild bulk pork sausage
- 1 1/4 cup catsup
- 1/4 cup water
- 1/4 cup firmly packed brown sugar
- 1 T soy sauce
- 1 T lemon juice
- 1 (15 1/4 oz) can pineapple chunks, drained.

- 1 8oz can pineapple chunks
- 3/4 lb lean ground beef
- 3 T minced green onion
- 1 egg, beaten
- 1/4 t salt
- 1/4 t ground ginger
- 2 T soy sauce
- 2 T vegetable oil
- 1 small green pepper, cut in thin strips
- 1 cup cooked sliced carrots
- 1/4 cup sliced water chestnuts
- 1 1/2 T vinegar
- 2 T soy sauce
- 1 T cornstarch
- 1 1/2 T sugar
- Hot cooked rice
Cakes: Williams Sonoma Mini-Orange-Almond Pound Cake

Have all ingredients at room temperature
- 3/4 cup all-purpose flour
- 1/2 t baking powder
- 1/8 t salt
- 3/4 cup almond paste
- 3/4 cup granulated sugar
- 12 T (1 1/2 sticks) unsalted butter
- 3 eggs, slightly beaten
- 1/2 t orange oil
- Rum Glaze
- 3 T dark rum
- 2 t water
- 1/3 cup sugar
- 1 T unsalted buter
- 1/8 t orange oil
- Confectioners sugar for dusting

- 1/4 cup sugar
- 3 T cornstarch
- 1/4 t allspice
- 4 Georgia peaches, peeled and cut into 1/2" wedges
- 2 cups fresh blackberries, room temperature
- Crumble
- 2/3 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 t ground cinnamon
- 1/4 t kosher salt
- 4 T butter, softened
- 2/3 cup coarsely chopped pecans

Pork: Honey's Sweet & Sour Pork

- 2 lbs fresh pork, cut in small pieces
- 1/4 cup brown sugar
- 2/3 cup cup vinegar
- 1 can pineapple chunks
- 2 tomatoes
- 2 green peppers
- 1/4-1/3 cup soy sauce
- 3 T cornstarch
- Salt to taste

- 3 oz. bittersweet chocolate, broken in pieces
- 1/3 cup all purpose flour
- 3 T cocoa powder
- 1/2 t baking powder
- 1/8 t salt
- 2/3 cup sugar
- 1 medium egg
- 1 t vanilla extract
- To taste 4x
Beef: Chinese Pepper Steak

Slice peppers into strips
- 3 medium green peppers
- 1/2 pound flank steak, cut into sections against grain
- Mix next 5 ingredients and rub into steak, let stand 15 minutes.
- 1/4 t salt
- 1/2 t sugar
- 1 1/2 T soy sauce
- 1/2 T casking sherry
- 1/2 T cornstarch

- 1 1/2 c oil
- 4 eggs
- 2 cups pumpkin (1medium can)
- 3 c flour
- 1/2 t salt
- 2 t baking powder
- 2 t allspice
- 3 t cinnamon
- Buttercream Frosting
- 1 box 4x sugar
- 1/2 stick margarine
- 1 t lemon rind
- Lemon juice
- Make according to directions on 4x box using lemon juice and 1 t lemon zest.

- 2/3 cup oil
- 2/3 cup cider or balsamic vinegar
- 1/3 cup sugar
- 1 t salt
- 1/2 t black pepper
Soups & Gumbos: Williams Sonoma Gumbo

Put the andouille and smoked sausages and the veal in a large Dutch oven
- 1/2 lb andouille sausage, cut in bite size pieces
- 1/2 lb smoked sausage, cut in bite size pieces
- 1/2 lb boneless veal stew meat, cut in bite size pieces
- 1/2 cup plus 2 T vegetable oil
- 1 lb okra, trimmed and cut into 1/8 inch rounds
- 6 T all-purpose flour
- 1 cup chopped yellow onions
- 3 quarts water
- 1/2 lb boneless, skinless chicken thighs, cut into bite size cubes and seared til golden brown
- 1/2 lb smoked ham, cubed
- 3 cloves garlic, minced
- 1 T paprika
- 1/4 cup chopped fresh flat leaf parsley
- 1 t ground dried thyme
- 1 1/2 lb shrimp
- 1 T file powder
- Salt and fresh cracked pepper
- Steamed white rice for serving
- Hot sauce for serving
