Poultry: Moroccan Rock Cornish Hens

Bring broth to a boil in medium saucepan
- 2 1/2 cups chicken broth
- 1 cup Uncle Ben's Converted Brand Rice
- 1 cup plain low-fat yogurt
- 1/2 cup currants
- 1/4 cup toasted pine nuts or slivered almonds
- 1/4 cup sliced scallions
- 2 1/2 T orange liqueur
- 1 1/2 t grated orange peel
- 1/4 t ground allspice
- 1/4 t ground cinnamon
- 6 Rock Cornish hens (1 to 1 1/4 lbs each)
- 1 t salt
- 1/2 t freshly ground pepper
Beef: Aunt Ellen's Meatloaf

Mix ingredients. Cook at 325 degrees for 1 hour
- 2 pounds beef
- 2 medium eggs
- 1/3 cup ketchup
- 3/4 cup warm water
- 2 slices bread
- to taste pepper
- 1 package beef mushroom dehydrated soup (or similar fresh ingredients)

- For 1 dozen biscuits:
- 1 cup white flour
- 1 cup wheat flour
- 2 t baking powder
- 1/4 t salt
- 1/4 t soda
- 1/4 cup oil
- 2 T vinegar
- 1 cup skim milk

- 4 t baking powder
- 1 t salt
- 1/8 t soda
- 1/2 cup or more shortening
- buttermilk
Salads: Broccoli Salad

Combine. Toss with dressing
- 3 cups broccoli florets
- 6 slices bacon
- 1 red onion, chopped
- 1/2 cup shredded cheddar cheese
- sunflower seeds
- raisins
- Dressing
- 1 cup mayonnaise
- 2 T white vinegar
- 1/4 cup sugar
Grains/Pastas: Pasta with Arugula and Shaved Parmesan

Combine the first 7 ingredienets in a large bowl
- 2 1/4 cups chopped plum tomato
- 1/4 cup chopped pitted kalamata olives
- 1 1/2 T extra virgin olive oil
- 1/2 t crushed red pepper
- 1/4 t salt
- 1/4 t freshly ground pepper
- 2 garlic cloves, minced
- 4 cups hot cooked gemelli or fusilli (about 8 ozs uncooked pasta twists)
- 3 cups torn trimmed arugula
- 2 ozs shaved fresh Parmesan cheese

- Boil potatoes fork tender (8 potatoes)
- Cool and dice
- Add
- 3 eggs
- celery
- onion
- pickle - whole small jar
- mustard
- mayonnaise
Breads: Sally's Favorite Thanksgiving Rolls - Angel Biscuits

Mix warm water with yeast, dissolve
- 5 cups flour
- 1/4 cup sugar
- 1 cup Crisco
- 1 package yeast
- 3 t baking powder
- 1 t soda
- 1 T salt
- 2 T warm water
- 2 cups buttermilk
Icings: Baker's One Bowl Chocolate Frosting

Microwave chocolate in a large microwaveable bowl on HIGH for 1 1/2 minutes, stirring every 30 seconds
- 4 squares Baker's Unsweetened Chocolate
- 1 pkg. powdered sugar
- 1/2 cup (1 stick) butter
- 2 tsp. vanilla
- 1/3 cup milk
