Desserts: Peanut Butter Marbled Brownies

Preheat oven to 350 degrees F (175 degrees C)
- 2 (3 ounce) packages cream cheese, softened
- 1/2 cup peanut butter
- 1/4 cup white sugar
- 1 egg
- 2 tablespoons milk
- 1 cup butter or margarine, melted
- 2 cups white sugar
- 2 teaspoons vanilla extract
- 3 eggs
- 3/4 cup unsweetened cocoa powder
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup semisweet chocolate chips
Vegan: Simple Cauliflower Soup

1 Bring 1 quart of water to a rolling boil in a medium-sized pot
- Florets from one head of cauliflower (tough core of cauliflower discarded)
- 1 quart of water
- Salt
- Unsalted butter
- Chives
- Olive oil
Fruits: Pineapple Casserole

- 2 large cans chunk pineapple
- Place in casserole with juice.
- Cover with 1 cup sugar (or less)
- 2 1/2 T flour
- 1 1/2 cup grated sharp cheese
- Top with
- 1 stick melted butter mixed with 1 cylinder crushed Ritz crackers
Salads: Three Bean Salad

In a large bowl, combine first 5 ingredients
- 1 can El Paso Garbanzos, drained
- 1 can (15 oz) Pinto beans
- 1 can (15 oz) cut green beans
- 1 small onion, sliced
- 1/2 cup chopped celery
- 1/4 cup sugar
- 1/4 cup distrilled white vinegar
- 1/4 cup vegetable oil
- 1/4 t salt
- 1/4 t pepper
Cakes: Quick Rum Cake

Bake at 350 degrees for 50 minutes
- Topping:
- 1 cake mix - Deluxe 11 (yellow)
- 4 eggs
- 1 package instant vanilla pudding
- 1/2 cup oil
- 1/2 cup water
- 1/2 cup rum
- 1 stick butter
- 1/4 cup water
- 1/4 cup rum
- 1 cup sugar
Breads: Leslie Taylorson's Awesome Sandwich Bread

gluten free, dairy and egg free
- 2 cups white spelt flour
- 1 cup potato or tapioca starch
- 2 t salt
- 1/4 cup ground flaxseed meal
- 1 T yeast (don't add yeast yet if using the delay setting on a bread maker)
- 1/4 cup coconut oil
- 1/4 cup honey
- 1 3/4 cups warm unsweetened coconut milk (heat about 1 minute in microwave) (plain kefir)
- 1 t mild tasting vinegar (distilled white or apple cider vinegar)
Eggs: Barefoot Contessa's Deviled Eggs

Directions Place the eggs in a pot large enough to hold them in a single layer
- Ingredients
- 8 extra-large eggs
- 1/2 cup sour cream
- 2 ounces cream cheese, at room temperature
- 2 tablespoons good mayonnaise
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons minced fresh chives, plus extra for garnish
- 4 ounces good smoked salmon, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 ounces salmon roe

Mix well. Fill cup 1/2 full with dry mix and add hot water
- 16 oz Creamora
- 1 box powdered sugar
- 1 8-qt box dry milk
- 4 8-oz Nestle Quick Mix
Soups: Janet Lefkowitz Gumbo

- Add:
- 1 cup oil (part butter, part olive oil)
- 1 cup flour
- Janet uses less to make roux
- 8 stalks celery
- 3 large onions
- Green onions
- 1 green pepper
- 2 cloves garlic
- Add to roux
- Cook 30-45 minutes
- 1/2 fresh parsley
- Add 2 lbs okra with 2 T shortening. Cook til no longer ropey.
- 2 quarts chicken stock
- 1-2 quarts water (use part of stock from some shrimp in shells cooked in lots of Old Bay, lemon and celey tops)
- Lots of L&P Louisiana hot sauce
- 3-4 cans diced tomatoes (with Italian seasonings)
- Ham hock
- Salt and pepper
- 1-2 bay leaves
- Thyme
- Herbs de Provence
- Cook a long time, several hours, slowly.
- Add:
- 4 lbs shrimp
- 4 lbs jumbo lump crabmeat (add 30 minutes before serving)
- 3 quarts oysters (cook in own juice - cook til starts to curl)
- 2 cups cooked chicken, optional
- Add oysters and chicken last.
Icing: Jeni's Icing

- 1/8 t salt
- 1 cup powdered sugar (sifted)
