Vegetables: Cook's Salt Baked Potatoes with Roasted Garlic and Rosemary

WHY THIS RECIPE WORKS: Sometimes baked potatoes can use a flavor boost
- 2 1/2 cups plus 1/8 teaspoon salt
- 4 russet potatoes, scrubbed and dried
- 2 sprigs plus 1/4 teaspoon minced fresh rosemary
- 1 whole head garlic, outer papery skin removed and top quarter of head cut off and discarded
- 4 teaspoons olive oil
- 4 tablespoons unsalted butter, softened

Heat 2 T oil in Dutch oven over medium-high heat until shimmering
- 1/4 cup olive oil
- 1 medium onion, chopped (about 1 cup)
- 3 medium cloves, minced
- Pinch hot red pepper flakes
- 1 bay leaf
- 2 28oz cans whole tomatoes packed in juice
- 1 T brown sugar
- 3 large slices good quality sandwich bread, crusts removed, torn into 1" pieces
- 2 cups low sodium chicken broth
- 2 T brandy (optional)

- 1 cup sugar

- 1/2 cup chopped nuts
- 1/4 t almond extract
Lemon Pound Cake
