Cheesy Sausage and Egg Bake

1. Heat oven to 350. Greese 13 x 9 x 2 inch pyrex baking dish
- 1 pound bulk pork sausage, cooked and drained
- 1 1/2 cups sliced, fresh mushrooms (4 oz)
- 8 medium green onions, sliced (1/2 cup)
- 2 medium tomatoes, chopped (1/2 cup)
- 2 cups shredded mozzarella cheese (8 oz)
- 1 1/4 cups Original Bisquick mix
- 1 cup milk
- 1 1/2 t's salt
- 1 1/2 t's chopped, fresh oregano leaves or 1/2 t dried oregano leaves
- 1/2 t pepper
- 12 eggs
Bacon Cheeseburger Pie

1. Heat oven 400. Spray 9 inch glass pie plate
- 6 slices of Bacon
- 1 pound lean (80%) ground beef
- 1/4 tsp pepper
- 1 large onion, chopped (1 cup)
- 1/4 cup ketchup
- 1 cup shredded cheddar cheese (4oz)
- 1 cup milk
- 1/2 cup Bisquick original
- 2 eggs
Grilled Pineapple

- Ingredients
- 1 1 1 pineapple
- 1 1 1 cup apricot jelly
- 2 2 2 tablespoons light brown sugar
- 1 1 1 tablespoon unsalted butter
- 1 1 1 tablespoon ground cinnamon
- Pinch Pinch of salt
- Vanilla ice cream, for serving

- Directions
- Prepare a grill for medium heat.
- to 4 pineapple in half lengthwise from the very top to the bottom (keeping the leaves on). Then cut each half lengthwise in half again, so you have 4 long pieces with leaves at one end.
- to the jelly, brown sugar, butter, cinnamon and salt to a medium saucepan over medium-low heat. Cook, stirring, until the mixture is fully combined and liquid.
- Drizzle the remaining apricot mixture over the pineapple. Serve with vanilla ice cream.

Mexican Shepherd's Pie

1. In a 10skillett cook beef and 1/4 cup onion over medium-high heat 5-7 min
- 1 pound extra lean (93%) ground beef
- 1/2 cup sliced green onions - divided
- 1 cup Old El Paso Thick and chunky Salsa
- 1 1/2 tsp chili powder
- 3/4 tsp cumin
- 1 can (11oz) Green Giant Mexicorn corn, drained
- 1 pouch Betty Crocker loaded mashed potatoes (from a 6.1 oz box)
- 1 1/3 cups water
- 2 tbs butter
- 1 cup milk
- 1/2 cup (2oz) shredded Cheddar cheese
- 1 medium tomato, sliced into thin wedges
- tortilla chips
Tilapia - Lemon and Herb

1. Pre-heat oven to 400 F 2
- 1 small lemon
- 4 T butter, softened
- 1 T fresh chopped parsley
- 3/4 t salt
- 1/8 t black pepper
- 1/4 chopped green onions, with tops
- 4 Tilapia fillets, about 6 oz each (1.5 Ibs total)

- Ingredients
- 1 1 1 tablespoon bacon drippings

- 2 2 ounce) packages 2 (16 ounce) packages sauerkraut, undrained
