Fried Rice

On medium high heat, heat the oil in a large skillet or wok
- 3 cups cooked white rice (day old or leftover rice works best!)
- 3 tbs sesame oil
- 1 cup frozen peas and carrots (thawed)
- 1 small onion, chopped
- 2 tsp minced garlic
- 2 eggs, slightly beaten
- 1/4 cup soy sauce
Lentil Vegetable Soup

In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes
- Ingredients
- 1 pound French green lentils
- 4 cups chopped yellow onions (3 large onions)
- 4 cups chopped leeks, white part only (2 leeks)
- 1 tablespoon minced garlic (3 cloves)
- 1/4 cup good olive oil, plus additional for drizzling on top
- 1 tablespoon kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- 1 tablespoon minced fresh thyme leaves or 1 teaspoon dried
- 1 teaspoon ground cumin
- 3 cups medium-diced celery (8 stalks)
- 3 cups medium-diced carrots (4 to 6 carrots)
- 3 quarts chicken stock
- 1/4 cup tomato paste
- 2 tablespoons red wine or red wine vinegar
- Freshly grated Parmesan cheese
Dill Cucumber Salad

In a bowl, combine dill and salt
- 1/2 cup sour cream or plain yogurt (I used greek yogurt)
- 1 cucumber peeled and sliced
- 1 medium to large tomato (sliced then cut in quarters)
- 2 slices onion (sliced then cut in quarters)
- 2 tsp lemon juice
- 1/2 - 1 tsp dill
- Salt to taste
Sweet Potato Fries with Bourbon Vanilla Dipping Sauce

Preheat oven to 450 degrees and lightly grease 2 cookies sheets, or line with parchment
- Sweet Potato Fries
- 4 smallish sweet potatoes (we prefer garnet), 6-8″, 2-3″ in diameter
- 4 tablespoons olive oil or melted coconut oil
- Salt to taste
- Optional seasonings
- Bourbon Sauce
- 2 c Mayonnaise
- 1/3 c Bourbon prepared + .25 oz reserved raw
- 1/2 tsp vanilla extract
- 2 1/2 T maple syrup
- 1.5 tsp molasses
- 3/4 tsp Cinnamon
- pinch kosher salt
Stuffed Bell Peppers

Fill pot with water and bring to a boil
- 6 Bell Peppers Green and Red
- 1/2 Lb. Lean ground beef
- 1/2 Lb. Italian sweet sausage
- 1/2 Onion
- 1 cup cooked Rice
- 1 TB.Italian Seasoning
- Salt & Pepper to taste
- 1 ) can Italian style tomatoes
- 1 ) small can mushrooms ( drained).
- 1/2 cup shredded cheddar/jack cheese
- 1/2 cup tomato sauce

- 1 tbsp extra virgin olive oil
- 1 lb lean ground/minced beef
- 2 whole carrots, diced
- 4 celery stalks, diced
- 1 medium onion, diced
- 28 oz can crushed/chopped tomatoes
- 2 cans (14.5 oz each) beef broth or fresh beef stock
- 2 whole bay leaves
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- salt and pepper to taste
- 1 can (15 oz) cannellini beans, drained and rinsed

Apple Pie Bites

- 1/4 cup packed light brown sugar
- 1 teaspoon apple pie spice, and additional apple pie spice for sprinkling on top of crescent rolls
- 3 tablespoons butter, melted
- 1/3 cup chopped pecans
- 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices

Summertime Sangria

Prepare sugar syrup by combining water and sugar in a small saucepan; heat to boiling over high heat
- 6 TBS water
- 5 TBS sugar
- 1 cup blackberries
- 1 cup blueberries
- 1 cup pitted cherries
- 1 cup diced, pitted peaches
- 1 orange, unpeeled, cut in half lengthwise and cut into 1/4" slices
- 10 medium strawberries, hulled and quartered lengthwise
- 5 cups dry red wine
- 1 1/2 cups orange juice
- 1/2 cup orange liqueur
- Ice cubes
- 1 1/2 sparkling water
