Dulce de Leche Coffee

- 4 cups Strongly Brewed Good Coffee
- 6 ounces, fluid Dulce De Leche (*see Note)
- 6 Tablespoons Kahlua, More If Preferred
- 1 cup Heavy Cream
- 2 Tablespoons Sugar
- 6 Tablespoons Chocolate, Grated
Caramel Apple Cheesecake

- 2 cups crushed graham crackers, 1/4 C. Sugar, 1 stick (melted) butter and press into 9x13 pan. (I stick in the freezer while I make the topping so it sets)
- Cream together, 2 blocks of 8 ounce cream cheese (softened) & 4 C powdered sugar. Then, fold in 12 ounces Cool Whip.
- Top over the graham cracker crust.
- Top with diced red & green apples & drizzle with sundae caramel sauce.
- Enjoy!!
Inexpensive Spanish Red Wine (750 Ml)

Added by Combine the liquid ingredients in a large pitcher and stir well
- 1 bottleInexpensive Spanish Red Wine (750 Ml)
- ¾ cupsOrange Juice (we Used Blood Orange Since We Had It)
- ½ cupsTriple Sec
- ⅓ cupsLemon Juice
- ¼ cupsCreme De Cassis
- ¼ cupsSimple Syrup
- 2 wholeLemons, Sliced (reserve Some For Garnish)
- 2 wholeLimes, Sliced (reserve Some For Garnish)
- 1 wholeOrange, Sliced (reserve Some For Garnish)

Make the base in a blender
- 3 C thinly sliced, peeled, seeded cucumber (1 large or 2 standard)
- 1 1/2 C silver agave tequila
- 1 C fresh lime juice
- 1 C Lime Simple Syrup
- lime half
- coarse salt
- 6 - 7 C ice cubes, crushed
- cucumber slices for garnish
BANANA PUDDING POKE CAKE

- 1 box yellow cake mix (& ingredients to make cake)
- 2 box (small) instant banana pudding
- 4 c milk
- 8 oz whipped topping
- 20 vanilla wafers, crushed
- sliced bananas - use your own judgment
Maragaritas

- 3 C thinly sliced, peeled, seeded cucumber (1 large or 2 standard)
- 1 1/2 C silver agave tequila
- 1 C fresh lime juice
- 1 C Lime Simple Syrup
- lime half
- coarse salt
- 6 - 7 C ice cubes, crushed
- cucumber slices for garnish
- Make the base in a blender. Combine cucumber, tequila, lime juice and simple syrup. Blend until smooth as possible. Strain into a pitcher. Cover and refrigerate until chilled, about 1 hour.
- Moisten the rims of 3 6-oz martini glasses with the cut side of the lime half. Spread coarse salt on small plate, then upend the glasses into the salt to crust the rims.
- Fill cocktail shaker 3/4 full with ice, then add 1.5 C base. Cover and shake for 10 – 15 seconds. Strain into the salted martini glasses.
- Garnish with cucumber slices.
Chicken Fettuccine Alfredo with Veggie

In a Dutch oven, bring water to a boil
- 2 quarts water
- 1 Package 9 oz refrigerated fettuccine
- 3 Cups frozen mixed vegetables
- 1 Package 9 oz ready to serve roasted chicken breast
- 1 1/2 Cups Alfredo sauce
- 1/2 Cup shredded Parmesan cheese
Baked Eggs with Chorizo and Potatoes

Preheat the oven to 375°
- 2 pounds medium Yukon Gold potatoes
- 1 1/2 pounds fresh chorizo, casings removed (see Note)
- 1 large onion, finely chopped
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper
- 8 large eggs
- Toast and hot sauce, for serving

Sift dry ingredients. Add water and mix well
- 3/4 cup flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
