Souvlaki is a Greek specialty made with tender cuts of meat
- 1 lemon, juiced
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1 teaspoon dried oregano
- 3 cloves garlic, crushed
- 4 pounds pork tenderloin, cut into 1 inch cubes
- 2 medium yellow onions, cut into 1 inch pieces
- 2 green bell peppers, cut into 1 inch pieces

Zucchini Herb Casserole

- 1/3 cup uncooked long grain white rice
- 2/3 cup water
- 2 tablespoons vegetable oil
- 1 1/2 pounds zucchini, cubed
- 1 cup sliced green onions
- 1 clove garlic, minced
- 1 1/4 teaspoons garlic salt
- 1/2 teaspoon basil
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon dried oregano
- 1 1/2 cups seeded, chopped tomatoes
- 2 cups shredded sharp Cheddar cheese, divided

- 4 small zucchini, thinly sliced
- 1 medium tomato, seeded and chopped
- 1/4 cup pitted ripe olives, halved
- 2 tablespoons chopped green onion
- 4 teaspoons olive or canola oil
- 2 teaspoons lemon juice
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 2 tablespoons grated Parmesan cheese
ROASTED GARLIC MUSHROOMS

THESE ROASTED GARLIC MUSHROOMS ARE SO POPULAR
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp corn or vegetable oil
- 1/4 c unsalted butter, softened
- 3 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1 1/2 tbsp lemon juice
- salt and freshly ground black pepper to taste
- 1/4 c fresh breadcrumbs
GREEK CHICKEN PITAS

Cut each chicken thigh into 8 pieces
- Sauce:
- 2 TBS (30 ml) mayonnaise
- 1 container plain yogurt (170 g)
- 1 tsp (5 ml) dried oregano
- 1 tsp (5 ml) dried dill
- 1/4 tsp (1 ml) salt
- 1 TBS (14 ml) lemon juice
- 1 clove garlic, crushed
- dash hot pepper sauce
- In a bowl combine sauce ingredients and stir until blended.
- Cover and refrigerate until needed.
- 1 lb (500 g) boneless skinless chicken thighs
- 1 TBS (15 ml) canola oil
- 1 clove garlic, crushed

Honey Dijon Chicken

This is a very simple one baking sheet dinner that’s easy to throw together on those busy weeknights
- Ingredients:
- 2 tablespoons olive oil, divided
- 3 tablespoons honey
- 1 tablespoon Dijon mustard
- 3 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 tsp Kosher salt plus more to taste
- 1/4 tsp freshly ground black pepper, to taste
- 16 ounces baby red potatoes, halved
- 4 boneless,skinless chicken breasts,5-6 oz each, pounded to even thickness if necessary so that they cook evenly
- 20 ounces broccoli florets
Mushroom Stuffed Zucchini

A delicious meatless main dish

- 3 zucchini, trimmed
- 2 tablespoons butter
- 1 cup chopped fresh mushrooms
- 1/4 cup red bell pepper, chopped
- 2 tablespoons all-purpose flour
- 1/4 teaspoon crushed dried oregano
- 1 cup shredded Monterey Jack cheese
- 1/4 cup grated Parmesan cheese
CREAMY CAULIFLOWER SAUCE

Garlic: Saute the minced garlic with the butter in a large nonstick skillet over low heat
- 8 large cloves garlic, minced
- 2 tablespoons butter
- 5-6 cups cauliflower florets
- 6-7 cups vegetable broth or water
- 1 teaspoon salt (more to taste)
- 1/2 teaspoon pepper (more to taste)
- 1/2 cup milk (more to taste)
Pesto Sauce

- 2/3 cup packed, coarsely chopped fresh basil
- 1/3 cup grated Parmesan cheese

- 2 tablespoons pine nuts or sunflower kernels

- 1/4 cup brown sugar
- 1 tablespoon vanilla
- 1 tablespoon instant yeast
- 4 cups flour
- 2 teaspoons salt
