- DASH OF CAYENNED PEPPER

Breakfast Sandwich with Hollandaise Sauce (without eggs)

1. In a medium-sized frying pan, heat 1 and 1/2 teaspoons of olive oil
- Hollandaise Sauce (the "no-egg" variety)
- 1 and 1/2 teaspoon of olive oil
- 1 large shallot, finely minced (2 tablespoons)
- 1 clove of garlic, finely minced
- 1 and 1/2 teaspoons of white wine vinegar
- 1 cup of milk or soy milk
- 2 teaspoons of cornstarch
- 1/4 teaspoon of turmeric
- 1 vegetable bouillon cube or 1 teaspoon of vegetable stock powder
- 1 and 1/2 teaspoons of fresh lemon juice
- 2 tablespoons of unsalted butter (or vegan butter)
- salt and pepper to taste
- 1 teaspoon of sugar (if vinegar and lemon are too sour)
- Vegetable Mixture
- 1 yellow or red pepper, diced finely
- 1 zucchini, chopped
- 1 tomato, chopped
- 1 and 1/2 teaspoons of olive oil
- 1 clove of garlic, finely minced
- a few sprigs of rosemary
- Other Items
- English Muffins, toasted (note: use vegan English muffins if you want this to be a vegan meal)
- Slices of swiss cheese (you could also use vegan cheese slices here)
Easy Broccoli Quiche from Kraft and Ritz

Heat oven to 350 F Combine cracker crumbs and melted butter
- 1 1/2 cups (375ml) crushed Ritz crackers
- 1/4 cup(50ml) butter or margerine melted
- 4 eggs slightly beaten
- 2/3 cup(150ml)milk
- 1 1/2 cup (375 ml) cooked brocolli
- 1 1/2 cups(375ml) grated cheese
- 1/2 tsp (2ml) each salt and pepper
- 1 tomato thinly sliced
Sicilian Skillet Chicken

Mix 1/2 of cheese and flour, salt and pepper to taste
- 4 half boneless chicken breasts, skinned
- 6 tbsp. grated Parmesan cheese
- 3 tbsp. flour
- 2 tbsp. olive oil or vegetable oil
- 1 c. mushrooms, sliced (optional)
- 1/2 onion, finely chopped
- 1/2 tsp. rosemary, crushed
- 1 (14 1/2 oz.) can Del Monte Italian Style stewed tomatoes

Combine contents of seasoning, water and butter in a 8 inch glass pan
- 1 pkg. stove top stuffing
- 2 Tbsp. butter
- 2/3 cup red and green peppers (chopped)
- 1 cup mozzarella cheese (shredded)
- 1 to 1 1/4 cup water (very hot)
- 1 egg (slightly beaten)
Orange-Maple Syrup Marinade for chicken

Combine all ingredients in a bowl
- 1/4 cup (60 mL) maple syrup
- 2 Tbsp. (30 mL) finely chopped fresh basil
- 1 Tbsp. (15 mL) whole grain mustard
- 1/4 cup (60 mL) orange juice*
- Freshly ground pepper to taste
