One pot Chicken Pasta

In a heavy duty pan begin with the garlic, mushrooms and the chicken
- 12 oz linguine
- 2 cups julienne onions
- 4 to 6 finely sliced garlic cloves
- 2 pints cut in half cherry tomatoes
- 2 oz olive oil
- 2 1/2 cups chicken stock
- 1 cup 35% cream
- 8 oz julienne chicken breast washed well
- 8 oz sliced mushrooms
- 2 oz baby spinach
- 1 bunch basil
- pinch chili flakes
- pinch salt and pepper
Pantry Pumpkin Soup

1. Heat oil in a large pot over medium
- 2 Tbsp olive oil
- 1 leek,white and light green parts only, sliced
- 1 stalk celery, chopped
- 1 Yukon gold potato, diced
- 2 tsp curry powder
- 6 cups low sodium chicken stock
- 796 ml can pumpkin
- 1 Tbsp lemon juice
- 370 ml can 2% evaporated milk or non fat
- salt and pepper to taste
- pinches of nutmeg (optional)
- whole wheat croutons (optional)
No Bake Chocolate Granola Clusters

Line 2 large baking sheets with waxed paper
- 1/4 cup unsalted butter
- 300 g package mini marshmallows(about 6 cups)
- 250 g package semi sweet chocolate chips
- 5 cups granola with dried fruit
- 1 cup butterscotch chips
- 30 whole almonds(optional)
Killer Garlic Shrimp

- 1 Tbsp fennel seeds
- 1 Tbsp dried oregano

- 3 Tbsp flour
- 2 (15 ounce) cannellini or white beans rinsed and drained
- 1 bunch swiss chard or 1 pkg frozen spinach
- 1 1/2 cups frozen corn thawed
- 4 cups low sodium chicken stock
- 1/4 tsp crushed red pepper flakes

Preheat oven to 375 degrees In a large bowl whisk flour with baking soda, pie spice and salt

- 1 cup plus 2 Tbsp sugar
- 1/2 cup brown sugar
- 4 egg whites divided
- 1/2 cup skim milk
- 1/4 cup canola oil

- 2 1/2 tsp baking powder
- 2 tsp pumpkin spice
