  • 3 cloves garlic, halved
  • 1 c chicken stock, low sodium
  • 1 c low-sodium diced tomatoes
  • 2 c escarole
  • 3 c cannellini beans, drained and rinsed
  • 1/2 c pepitas, raw (optional)

In small bowl, combine sauce ingredients; mix well

  • Sauce:
  • 1/2 cup plain non-fat yogurt
  • 1/3 cup seeded, chopped tomato

  • 2 tbsp finely chopped onion
  • 1 tbsp finely chopped fresh dill or 1 tsp dried dill weed
  • 1/4 tsp salt (optional)
