Stove Top Ground Turkey Lasagna

In a large skillet, brown turkey with onions and garlic
- 1 lb ground turkey
- 1 medium onion
- 3 minced garlic cloves
- 1 jar of “no salt added” tomato sauce (I just used my favorite pasta sauce – its called “All Natural Marinara Sauce” from Costco – it has no preservatives or added sugar)
- 1 tbsp basil leaves (dried)
- 1 tsp oregano
- 1 tsp salt
- 1 1/4 cup water
- 2 1/2 cups of broken lasagna noodles (whole wheat)
- 1 cup fat free cottage cheese
- 1/4 grated parmesan cheese
- 1 egg
- Mozzarella fat free cheese (shredded) – I didn’t use the mozzarella and it still tasted great
Tex Mex Turkey Spinach Burgers

1. Cook Europe’s Best® Chef’s Spinach according to package directions
- Topping:
- • 6 nuggets Europe’s Best® Chef’s Spinach, frozen
- • 750 g (1 ½ lb) ground turkey or lean ground beef
- • 1 egg
- • 175 mL (3/4 cup) fresh bread crumbs
- • 45 mL (3 tbsp) chopped fresh cilantro or parsley
- • 2 green onions, chopped
- • 75 mL (1/3 cup) tomato salsa or ketchup
- • 5 mL (1 tsp) dried oregano flakes
- • 2 mL (1/2 tsp) smoked paprika, ground cumin or chili powder
- • 5 mL (1 tsp) salt
- • 1 mL (1/4 tsp) pepper
- • 15 mL (1 tbsp) vegetable oil
- • 125 mL (1/2 cup) grated Monterey Jack or Cheddar cheese
- • 50 mL (1/4 cup) tomato salsa
Pork and Pineapple Kabobs

MIX first 3 ingredients. Reserve 1/4 cup sauce for later use
- 1/2 cup Kraft Original BarBQ Sauce
- 2 Tbsp. Dijon mustard
- 1 Tbsp. finely chopped fresh rosemary
- 1 lb. (450 g) boneless pork chops, cut into 1-inch pieces
- 1 cup fresh pineapple chunks (1 inch)
- 1 cup green pepper squares (1 inch)
- 1/2 cup red onion chunks (1 inch)

- • 1/4 cup / 60 ml whole-wheat flour
- • 1/3 cup / 80 ml oat flour*
- • 1/2 tsp / 2 1/2 ml baking powder
- • 4 Tbsp / 60 ml Sucanat
- • 1/4 tsp / 1 1/4 ml sea salt
- • 1/4 cup / 60 ml plain, fat-free yogurt
- • 1 Tbsp / 15 ml unsalted olive-oil based margarine or Do-It-Yourself Olive Butter Spread from The Eat-Clean Diet Cookbook
- • 2 egg whites
- • 1/4 cup / 60 ml mashed bananas
- • 2 1/3 cups / 550 ml thinly-sliced strawberries
- • Cooking spray
- * You can make your own oat flour by placing 1/3 cup oats in a food processor and blending into a fine pulp

- •2/3 cup grated low-fat Parmesan cheese (7 mL)
- •1/4 cup pesto (60 mL)
- •Large shrimp, cooked peeled and deveined (454g or 1 lb)
