Brunch Eggs Casserole

Brown the sausage in a skillet, stirring until crumbly; drain
- 1 pound breakfast sausage (regular or reduced-fat)
- 2 cups milk
- 6 eggs
- 1-1/2 teaspoons dry mustard
- 1 teaspoon salt
- 1 teaspoon mild curry powder (optional)
- 1/2 teaspoon dillweed
- Pepper to taste
- 2 cups shredded Cheddar cheese
- 1 cup fresh or canned sliced mushrooms
- 1/2 cup chopped onion (optional)
- 6 slices fresh bread, cubed
Hawaiian Chicken Kebabs

Cut each chicken breast, pineapple, pepper and onion into approximately twenty-four 1-inch-thick pieces
- 1 pound uncooked boneless, skinless chicken breast
- 1/2 medium pineapple
- 1 medium green pepper(s)
- 1 medium sweet red pepper(s)
- 1 large onion(s), spanish
- 1/4 cup pineapple juice, or orange juice
- 3 medium garlic clove(s), minced
- 2 Tbsp low-sodium soy sauce
- 1 tsp olive oil
- 2 serving cooking spray (5 one-second sprays per serving)
- 2 cup cooked white rice, kept hot
MARINADE FOR CHICKEN BREASTS

- 1/4 c. oil
- 1/4 c. cooking sherry
- 2 tbsp. lemon juice
- 1 clove garlic, minced
- Pepper
- 1/2 tsp. dehydrated onion flakes
Chocolate Chip Cookies

Cream shortening, sugars, egg, and vanilla thoroughly
- 1 c. shortening
- 1 c. sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 t. vanilla
- 2-1/4 c. all-purpose flour
- 1 tsp. soda
- 1/2 tsp. salt
- 12-oz pkg. Chocolate chips
- 1 cup chopped nuts
Tuna and Noodle Casserole

- Ingredients:
- Make a white sauce of:
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 C. milk
- Salt & Pepper
- Add:
- 1 can tuna
- 1 C. sliced mushrooms
- 1 C. grated cheese
- 1/3 C. olives, chopped
- 1/3 C. green pepper, chopped
- 8 oz. Country Pasta, cooked & drained.
Cinnamon Peach Kuchen

- 2 C. flour
- 2 T. sugar
- 1/2 t. salt
- 1/4 t. baking powder
- 1/2 C. cold butter (I used regular Smart Balance.)
- 2 - 15 oz. cans of peach halves, drained & patted dry (I used Kirkland sliced peaches.)
- 1 C. packed brown sugar
- 1 t. ground cinnamon
- 2 egg yolks – beaten
- 1 C. heavy whipping cream
Sweet potato soup

1. Preheat oven to 400ºF
- 2 large sweet potato(es)
- 1 1/2 cup canned chicken broth
- 1 Tbsp reduced-calorie margarine
- 1 Tbsp all-purpose flour
- 1/4 tsp ground ginger
- 1 cup fat-free evaporated milk
- 1 Tbsp chopped pecans
Pumpkin Cookies

Makes 3-4 dozen cookies. Bake at 350 degrees 12-15 minutes on greased cookie sheet
- 1 cup brown sugar
- 1/2 c. oil
- 1 t. vanilla
- 1 cup pumpkin
- 1 egg (optional)
- 2 cups flour
- 1/2 t. nutmeg
- 1 t. soda
- 1 t. baking powder
- 1/2 t. salt
- 1/4 t. ginger
- 1/2 cinnamon
- 1 cup raisins (opt)
- nuts (optional)
French Bread

Easy and Fast
- 2 c. water—good and warm
- 2 T melted margarine
- 1-1/2 T sugar
- 1 T salt
- Mix above ingredients well.
- Add 1 T yeast and let sit for 10 minutes
Ranch Style Biscuits in a Bag

- Bag contains: 3 c. flour, 1 pkg. ranch style
- salad dressing mix, 1 t. parsley flakes, and
- ½ t. garlic powder.
