  • 3 large carrots (about 1/2 pound), peeled and cut into 1-inch pieces
  • 8 ounces frozen pearl onions (1 1/4 cups), thawed
  • 2 garlic cloves, chopped
  • 2 tablespoons all-purpose flour
  • 2 cups hearty red wine
  • 1 cup low-sodium beef stock
  • 1 tablespoon tomato paste
  • 1 spig fresh rosemary
  • Fresh parsley (optional)
  • Celery root puree
  • 1 celery root (about 1 pound), peeled and cut into 2-inch pieces
  • 2 baking potatoes, peeled and cut into 2-inch pieces
  • 1 garlic clove, smashed
  • 1/2 cup 2% milk
  • 1/2 teaspoon salt
