Wine-braised Beef with Celery Root Puree

Wine-braised beef 1. Heat oven to 350 degrees
- Wine-braised beef
- 1 1/2 pounds beef chuck, cut into 2-inch cubes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon vegetable oil
- 3 large carrots (about 1/2 pound), peeled and cut into 1-inch pieces
- 8 ounces frozen pearl onions (1 1/4 cups), thawed
- 2 garlic cloves, chopped
- 2 tablespoons all-purpose flour
- 2 cups hearty red wine
- 1 cup low-sodium beef stock
- 1 tablespoon tomato paste
- 1 spig fresh rosemary
- Fresh parsley (optional)
- Celery root puree
- 1 celery root (about 1 pound), peeled and cut into 2-inch pieces
- 2 baking potatoes, peeled and cut into 2-inch pieces
- 1 garlic clove, smashed
- 1/2 cup 2% milk
- 1/2 teaspoon salt

- 3 1/2 cups confectioners' sugar
- 1 teaspoon ground cinnamon
- 7 tablespoons water

- 4 cups all-purpose flour
- 2 tsp salt
- 1 1/3 cups shortening
- 8-9 Tbls. cold water
