Preheat the oven to 350 degrees F
- 4 ounces baking chocolate (unsweetened or bittersweet)
- 2 cups granulated sugar
- 2 sticks salted butter, softened
- 3 large eggs
- 1 tablespoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 cup plus 1 tablespoon cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- Powdered sugar, for dusting
Tortellini Skewers

- 2 tablespoons jarred pesto
- 2 teaspoons red wine vinegar
- 2 packages spinach tortellini, cooked and cooled

Cheesy Roasted Potato Casserole!

Preheat oven to 425°F. Cut potatoes into 1-inch chunks and place in a lightly oiled 9 x 13-inch casserole dish
- 2 1/2 lbs (1.1 kg) unpeeled, thin-skinned potatoes (red or white)
- 1 cup chopped onions
- 1 tbsp olive oil
- 1 tsp minced garlic
- 1/2 tsp salt

Heat olive oil in a deep-sided skillet over medium heat
- 1 tablespoon olive oil
- 1 cup diced yellow onion
- 3 cloves garlic, sliced
- 1 teaspoon harissa paste
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 can (28 oz) Cento crushed tomatoes
- 1 jar (12 oz) roasted red peppers, drained and diced
- 1/4 teaspoon salt
- 1/2 cup cilantro, chopped, plus more for garnish
- 1/2 cup crumbled feta
- 8 eggs
- 4 whole wheat pitas, warmed (optional)

Garlic: Take whole bulbs and cut off the root end
