Banana-Brown Sugar Butter

In a small bowl, combine all ingredients
- 1/2 banana
- 2 tablespoons brown sugar
- 8 tablespoons (1 stick) butter, at room temperature
Make-Ahead Pizza Casserole

1. Spray a 9 by 13-inch baking pan with cooking spray
- Cooking spray
- 1/2 lb shredded mozzarella cheese
- 1/4 lb prosciutto, chopped
- 3 medium tomatoes, cored and diced
- 6 cups cubed French or Italian bread (about 1)
- 5 eggs
- 1 1/4 cups skim milk
- 1/2 cup reduced-fat sour cream
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- Grated parmesan cheese, optional
Simple Fruit Sauce

Each recipe is enough for 4 servings
- Strawberry/Blueberry - slice strawberries and combine with blueberries (1 cup each). Stir in 3-4 teaspoons strawberry preserves.
- Nectarine - Dice 3 nectarines (approx. 2 cups diced) and combine with 3-4 teaspoons apricot preserves.
- Pear - Dice 2 cups pear and combine with 3-4 teaspoons apricot preserves or apple jelly.
- Allow fruit and jam to sit for an hour or so to allow the sugars in the jam to draw out the juices in the fruit. Store any leftovers in the fridge for up to 2 days.
- Optional: Layer with granola and greek yogurt for an added burst of protein.
Crepes On-the-Run

Blend all of the ingredients until completely incorporated (an immersion or regular blender works well for this)
- 2 large eggs
- 3/4 cup milk
- 1/2 cup water
- 1 cup flour
- 1 Tbsp. brown sugar
- 3 Tbsp. melted butter
- 1/4 tsp. salt
- additional butter, for coating the pan
Linguine with Shrimp & Spinach Pesto

Cook the pasta according to package directions
- 1 pound(s) pasta
- 2 tablespoon(s) roasted almonds
- 1 small clove garlic
- 1 teaspoon(s) lemon zest
- 4 ounce(s) baby spinach (about 4 cups)
- 2 tablespoon(s) grated pecorino or Parmesan
- 3 tablespoon(s) olive oil
- Kosher salt and pepper
- 1 pound(s) large peeled and deveined shrimp
- 3/4 cup(s) dry white wine
- 1/4 teaspoon(s) crushed red pepper
White-Chocolate Ghosts

- 6 Twinkies
- 1/4 cup heavy cream
- 12-oz package white chocolate chips
- 16 Raisinettes or raisins
Lentil & Potato Stew

- 1 Tb. herbes de Provence
- 1 cup dry lentils (picked over and washed)
- 1 pound small red new potatoes (peeled or unpeeled), cut into 1/3-inch slices
- 4 cups vegetable broth
- Finish with parsley
Orange-Glazed Cod

- 1 and 1/2 TBSP orange marmalade
- 2 tsp dijon
- 2 tsp soy
- 1 tsp grated orange zest
- 1/8 coarsely grated black pep

Gren-Chile Pesto

Place spinach and cilantro in a food processor or blender and pulse to finely chop
- 1 1/2 cups chopped fresh baby spinach
- 1/2 cup chopped fresh cilantro or parsley
- 6 green New Mexico Hatch chiles, roasted and peeled, with stems and seeds removed
- 3 cloves garlic, peeled
- 2 tablespoons pine nuts
- 1 tablespoon lime juice
- 1/4 to 1/2 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 1 pound rigatoni
Cranberry Sparkler

FOR ADULTS: Sub champagne for club soda
- FOR KIDS:
- In a shaker, mix 4 oz.
- cranberry juice, 1 oz. orange juice, and
- 1 tsp. honey; shake, then pour over ice.
- Top with a splash or two of chilled
- club soda and a cherry.
