Easy Hummus and Homemade Wheat Thins

In a food processor, combine chickpeas with the liquid, garlic, lemon juice and sesame tahini
- ~For Hummus:~
- 15 ounces canned chickpeas, drained, reserving 1 tablespoon of liquid
- 1 clove garlic, chopped
- 2 tablespoons fresh lemon juice
- 1/4 cup Sesame Tahini (I used Joyva brand)
- 2 tablespoons extra-virgin olive oil (plus more for drizzling)
- 1/4 teaspoon salt (may double if desired)
- 1/8 teaspoon sweet or smoked paprika
- fresh parsley for garnish (optional)
- ~For Homemade Wheat Thins:~
- 1 1/4 containers whole-wheat flour
- 5 teaspoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon paprika (Sweet or Hungarian if possible)
- 4 tablespoons butter (chilled and cut into small pieces)
- 1/4 cup water
- 1/2 teaspoon vanilla
- salt and various seasonings for topping
No-Bake Chocolate Mousse Pie

In a food processor, pulse the cookies to form fine crumbs
- 7 oz. chocolate wafer cookies (about 32; we used Nabisco Famous Wafers)
- 6 tbsp. unsalted butter, melted, plus 4 tbsp.
- 10 oz. bittersweet chocolate, chopped
- 2 1/2 c. plus 1 1/2 c. heavy cream
- 1/4 c. confectioners' sugar
- 2 tbsp. unsweetened cocoa powder
- Chocolate curls, for serving

- 1 can (15 oz) black beans, rinsed and drained
- 1 can (11 oz) niblets corn, drained
- 1 can (4 oz) chopped chiles
- 1 cup cooked rice
- 1/2 cup cornmeal
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 Tbsp oil

- 1/2 -ounce unsweetened chocolate, finely chopped
- 1 teaspoon unsalted butter,softened, plus 3 tablespoons
- 3 tablespoons sugar
- 1 large egg
- 3 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 tablespoon unsweetened cocoa powder
