Fresh Fruit Pizza

Heat the oven to 400° Spread the dough in an ungreased 12-inch pizza pan
- 1 pound pre-made pizza dough
- 1 tablespoon melted butter
- 1 tablespoons sugar
- 1 (8-ounce) package low-fat cream cheese at room temperature
- 1/4 cup honey
- 1 teaspoon finely grated orange zest
- 1/2 teaspoon vanilla extract
- Assorted fruit (blueberries, banana slices, mandarin orange sections, seedless grapes, kiwi fruit slices, and strawberry halves or any other favorite fruit)
Baked Potato Salad

Makes 6-8 servings
- 3 to 4 large russet potatoes (about 13/4 pounds)
- 1 tablespoon or so olive oil
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 scallions, chopped
- 1 dash dried dill
- Kosher salt, to taste
- Ground black pepper, to taste

Puff Pastry Tuna Melt (goes w/ roasted corn soup)

In a large bowl, thoroughly blend the tuna, mayonnaise, cheeses and pepper
- 2 cans (6 ounces each) albacore tuna packed in water, well-drained and broken up with a fork
- 3 tablespoons mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/2 cup grated Swiss cheese
- 1/2 teaspoon freshly ground black pepper

Banana Split Ice Cream Cake

Let the ice cream sit at room temperature for a few minutes to soften
- 1 pint vanilla ice cream
- 1 chocolate pound cake
- 1 banana, thinly sliced
- 3 tablespoons chopped peanuts

Hearty Dinner Salad with Salmon and Maple Glazed Almonds

- 4 (1 lb) Salmon fillets (about 1 inch thick)

- 1/8 teaspoon freshly ground black pepper
- 6 to 8 cups your favorite lettuce
- 4 Green onions, sliced on the bias
- 11 oz can Mandarin orange segments, drained
- 1/2 cup maple glazed almonds

- ½ cup Almonds
- 1 ½ teaspoon grade B Maple Syrup

- 1 cup salsa
- 3 sliced green onions
Deconstructed Falafel Salad

Preheat the oven to 375 degrees F
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- One 19-ounce can chickpeas, rinsed, drained and patted dry
- 2 tablespoons olive oil
- 1/2 cup fresh parsley leaves
- 1/2 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons tahini paste
- 2 small cloves garlic, minced (about 1 1/2 teaspoons)
- 4 cups chopped romaine lettuce (about 1 head)
- 1 large tomato, diced
- 1 medium cucumber, seeded and diced
- 1 tablespoon toasted white sesame seeds
