Bitter Greens Salad

Combine the vinegar, shallots, honey, mustard, salt & pepper in a bowl for the vinaigrette
- 2 Tbsp. Sherry Vinegar or White Wine Vinegar
- 1 Tbsp. Shallots, minced
- 1 Tbsp. Honey
- 1/2 tsp. Dijon Mustard
- Salt & Freshly Ground Black Pepper
- 3 Tbsp. Olive Oil
- 1/2 C. Walnuts, coarsely chopped
- 1 Tbsp. Unsalted Butter
- 1 Tbsp. Sugar
- 8 C. Arugula
- 1 C. Radicchio, sliced into ribbons
- 1 Pear, cored & thinly sliced ( to core the pear, slice it in half vertically, then scoop out the seeds using a melon baller )
- 2 Tbsp. Gorgonzola, crumbled
Sweet Onion & Tomato Tartlets

Preheat oven to 400. Prick tomatoes with a fork or the tip of a sharp knife
- 3 C. Grape Tomatoes
- 1 Sweet Onion, quartered & thinly sliced ( about 2 C. )

- 1 Tbsp. Canola Oil
- 1 Lg. Onion, finely diced
- 4 Lg. Garlic Cloves, minced
- 2 tsp. Smoked Sweet Paprika
- 1 tsp. Cumin
- Pinch Cayenne
- 1 1/2 C. Ketchup
- 1/4 C. Packed Brown Sugar
- 1/2 C. Water
- 1/3 C. Cider Vinegar
- 2 Tbsp. Soy Sauce
- 2 Tbsp. Worcestershire Sauce

- 2 C. All-Purpose Flour
- 4 C. Bread Crumbs
