Pumpkin Pie

- Preheat oven to 425.
- 1 unbaked 9 inch pastry shell
- 1 (16 oz) can pumpkin
- 1 can sweetened condensed milk
- 2 eggs
- 2 teaspoons cinnamon
- 1/2 teaspoon salt 1 teaspoon ginger
- 1 teaspoon nutmeg
- whipped cream, for garnish
- nuts, as garnish , optional.
Poor Man Dumplings

Melt the butter in a skillet
- 1/2 1/2
- cup butter
- 1 onion, chopped
- 1 head of green cabbage, chopped
- 1 cup flour
- 1/2 1/2
- cup water
- 1 clove garlic, minced
- 1/2 1/2
- teaspoon dried oregano
- black pepper, to taste
Zucchini Cheese Recipe (from Hayley Ziegler)

Instructions Line an 8 by 8 inch baking pan with parchment paper
- 1 cup (about 7 ounces) zucchini, peeled and sliced
- 1/4 cup water
- 1 tablespoon coconut oil
- 1 teaspoon lemon juice
- 1 1/2 tablespoons gelatin (Hayley says you could use 3/4 teaspoon agar powder to make this vegan, but I haven't tried it)
- 1 tablespoon nutritional yeast (optional)
- 1/3 teaspoon sea salt, or to taste
Coconut Cream Truffles

Mix all of the above ingredients for the filling (fondant/ganache) together until thick and creamy
- 3 1/2 cups powdered sugar
- 1 stick butter, softened
- 3/4 of a 14oz bag sweetened coconut
- 1/2 of a can of sweetened condensed milk
Strawberry- Rhubarb Jam

Process all ingredients in a blender and refrigerate over night
- Makes 2 cups:
- 1 1/3 cups strawberries
- 2/3 cup rhubarb
- 2 Tabs raw honey or to taste
- 2 Tabs chia seeds
Gluten-Free Poppy Seed Popovers MA

Popovers are super easy to make
- 1 cup gluten-free all-purpose flour blend of choice
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon kosher salt
- 1 tablespoon unsalted butter or dairy-free alternative, melted and cooled
- 2 extra-large eggs, lightly beaten, room temperature
- 1 cup milk of choice (low-fat is fine, nonfat is not), room temperature
- 1 tablespoon poppy seeds

- 1/2 cup light Karo syrup

Ginger-Turmeric Tea (for kapha dosha)

Place the herbs and water together in a pot and bring to a boil, then simmer uncovered for 15 minutes
- 1 qt. of purified water
- 15 1/4-inch slices of fresh ginger root
- 1 1/2 tsp. of dried turmeric powder
- 1/2 tsp. of raw honey added to each cup you drink (optional)
Buckwheat Bread

In a large bowl, combine Xanthan Gum, baking powder, salt, flours, and flaxseed meal
- 1 Cup Plain Soymilk (used Silk Soymilk)
- 1 Cup Vegetable Oil (Canola, etc)
- 2 Eggs
- 1/4 Cup Honey
- 2 Teaspoons Xanthan Gum
- 1.5 Tablespoons Baking Powder
- 1/2 Teaspoon Salt
- 1 1/2 Cups Light Buckwheat Flour
- 1/2 Cup Glutinous Rice Flour
- 1/4 Cup Tapioca Flour
- 1 Cup White Rice Flour
- 1/4 Cup Flaxseed Meal
- Cooking Spray for top
- Honey for top (optional)
