1. FOR THE CRUST: Adjust oven rack to lower-middle position and heat oven to 325 degrees

- 9 whole graham crackers
- 3 tablespoons sugar
- 1/8 teaspoon salt
- 5 tablespoons unsalted butter, melted
- FILLING
- 1 teaspoon unflavored gelatin
- 4 tablespoons water
- 5 large eggs (2 whole, 3 separated)
- 1 1/4 cups (8 3/4 ounces) sugar
- 1 tablespoon cornstarch
- 1/8 teaspoon salt
- 1 tablespoon grated lemon zest plus 3/4 cup juice (4 lemons)
- 1/4 cup heavy cream
- 4 ounces cream cheese, cut into 1/2-inch pieces, softened
Flourless Chocolate Chip Mini Muffins

Chocolate Chip Mini Muffins: Preheat oven to 280F and grease a mini muffin tin, then set aside
- 1 cup almond meal (100g)
- 2 tbsp ground flaxmeal
- scant 1/4 tsp salt
- 1/4 tsp baking soda
- 2-3 tbsp mini chocolate chips
- 1/4 cup water
- 2 tbsp pure maple syrup
- 2 tbsp virgin coconut oil
- 2 tsp white or apple cider vinegar
Taco Noodle Bake

Cook noodles according to package directions
- 2 cups uncooked wide egg noodles
- 2 pounds ground beef
- 1 can (8 ounces) tomato sauce
- 1/2 cup water
- 1 can (4 ounces) chopped green chilies
- 1 envelope taco seasoning
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 cup (4 ounces) shredded cheddar cheese
- 2 cups shredded lettuce
- 1 cup diced fresh tomatoes
- 1/3 cup sliced ripe olives, drained
- 1/2 cup taco sauce
- 1/2 cup sour cream
Chocolate Walnut Cherry Bars

Soak the quinoa in enough warm water to cover it for about 35-40 minutes
- 1 cup packed pitted dates
- 1/2 cup dried cherries
- 1/3 cup Raw cacao powder
- 1/3 cup whole chia seeds
- 3/4 cup raw walnuts
- 1/4 cup organic sprouted quinoa (I use TruRoots brand or you could even use fresh sprouts)
