Banana Caramel Cupcakes

- 3 tbsp milk
- 1/2 cup mashed ripe bananas
- 1/2 + 2 tbsp sugar
- 1 cup flour

- 2 tbsp potato starch
- 1/2 tsp salt
- 5 pieces of soft caramels

- 1 onion, very finely diced

- 1 carrot, very finely diced
- 2 sticks celery, very finely diced
- 1 long red chilli, finely diced
- 1 cup (250 ml) apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon tomato paste (puree)
- 4 tablespoons treacle
- 2 tablespoons mustard powder
- 1/4 teaspoon ground turmeric
- 1/2 cup (125 ml) white vinegar
- 1 litre chicken stock

- 1 tablespoon chipotle sauce

- 1/3 cup quick oats
- 1 egg beaten

- For the dressing:
- One 16-ounce package of shredded Cole slaw mix
- 1/2 red bell pepper, sliced thin
- 1/2 medium onion, sliced thin
- 1 jalepeno, halved and sliced thin
- 1/3 cup olive oil
- 1/4 cup cider vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes

- 3 tbsp cornstarch
- 3/4 cup sugar
- juice and rind of 1 lemon
- 3 tbsp butter
- For the crust:
- All-Butter Pie Crust (With Variations)
- Time: 15 minutes plus one hour's chilling
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 10 tablespoons unsalted butter, preferably a high-fat, chilled and cut into 1/2-inch pieces
- 2 to 5 tablespoons ice water.
