- 225 g (16 tablespoons) butter, at room temperature
- 200 g (1 cup) granulated sugar
- 150 g (2⁄3 cup tightly packed) light brown sugar
- 50 g (2 tbs) glucose
- 1 egg
- 2 g (1/2 tsp) vanilla extract
- 225 g (1 1⁄3 cups) flour
- 2 g (1/2 tsp) baking powder
- 1.5 g (1/4 tsp) baking soda
- 4 g (1 tsp) kosher salt
- 150 g (3/4 cup) mini chocolate chips
- 100 g (1/2 cup) mini butterscotch chips
- 1/4 recipe (1/2 cup) graham crust (recipe below)
- 40 g (1⁄3 cup) old-fashioned rolled oats
- 5 g (2 1/2 tsp) ground coffee
- 50 g (2 cups) potato chips
- 50 g (1 cup) mini pretzels
Lamb Meatballs with spiced tomato sauce, mint, and feta

- 3/4 cup finely diced onion
- 1/4 cup heavy cream
- 2 XL egg yolks
- 1/2 tsp ground cinnamon
- 1 tsp crushed aleppo pepper
- pinch cayenne pepper
- 2 lbs ground lamb (or beef/pork combo)
- 1 cup fresh breadcrumbs
- 1/4 cup chopped flat leaf parsley
- 1 recipe spiced tomato sauce (recipe follows)
- 1/4 cup olive oil
- 1/4 lb feta cheese
- 2 tbsp sliced mint leaves
- salt and pepper
- Spiced tomato sauce
- 3 cups canned san marzano or muir glen tomatoes (or italian plum)
- 1/2 tsp cumin seeds
- 3 tbsp olive oil (i use grape seed)
- 1 small sprig rosemary
- 1 chile de arbol, crumbled
- 1 cup diced onion
- 1 tsp thyme leaves
- pinch ground cinnamon
- pinch cayenne pepper
- 1 bag leaf
- 1/2 tsp sugar
- 1/4 c freshly squeezed orange juice plus 3 inch strip of orange zest
- salt and pepper
Spicy Plum sauce

Heat oil in a medium saucepan over medium-high heat
- 2 tablespoons peanut oil
- 1 small onion -- coarsely chopped
- 4 cloves garlic -- coarsely chopped
- 1 tablespoon fresh ginger -- coarsely chopped
- 1 Thai chile -- coarsely chopped
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 1/2 pounds red or purple plums -- pitted and coarsely chopped
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon granulated sugar

Place rack in the center of the oven and preheat the oven to 375 F
- 2 oz. dark chocolate, chopped into small pieces
- 3/4 C. heavy cream, at room temperature
- 1/4 C. milk, at room temperature
- 3 egg yolks, at room temperature
- 3 T. granulated sugar
- 1/4 C. rhubarb coulis
- pinch of salt
mini pork, apple & pistachio sausage rolls

heat olive oil in a saucepan, add the onion and pinch of salt and saute until soft and translucent
- 500 g free-range pork mince/ground pork
- 1 red onion, peeled and finely chopped
- 2 cloves garlic, peeled and minced
- 3/4 cup roughly chopped pistachio
- 1/2 cup chopped dried apricots, (opt'l)
- 2 Granny Smith apples, grated
- Handful parsley
- 1 teaspoon mustard powder
- 2 tableespoons wholegrain mustard
- 1 tbsp cider vinegar
- Dash Hot sauce
- 4 sheets puff pastry (I used CAREME brand)
- Salt and freshly ground pepper
- 2 egg yolks and 1 tablespoon milk for egg wash
- Handful poppy seeds
Moosewood Black Bean-Sweet Potato Burritos

Preheat the oven to 350 degrees F
- 6 cups peeled cubed sweet potatoes (I used about 2 large ones)
- 1 tsp salt
- 2 tbsp canola or other vegetable oil
- 2 cups cups diced onions
- 3 large garlic cloves, minced or pressed
- 1 hot pepper, minced
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 3 cups cooked black beans (two 15 oz cans)
- 1/2 cup lightly packed cilantro leaves
- 1 Tablespoons fresh lemon juice
- 1 teaspoon salt
- 8 eight/ten-inch flour tortillas
- Fresh tomato salsa or jarred
- Cheese -
- Avocado - to serve with burritos

- 1/2 lb peeled fresh ging sliced crosswise against grain into paper-thin coins
- 1 1/3 cup unseasoned Japanese rice vinegar
- 3 tbsp cider vinegar
- 2 tbsp distilled white vinegar
- ½ c plus 1 tbsp sugar
- 1 tbsp plus 1 tsp kosher salt

- 2 qrts unseasoned Japanese rice vinegar
- 1 cup cider vinegar
- 1 cup distilled white vinegar
- 3 cups sugar
- ½ cup kosher salt
Spaghetti in Garlic Gravy with Herbs and Lemon Marinated Chicken and Cherry Tomatoes

- Add all the marinade ingredients into the chicken and marinade for 20 minutes (if making this dish in - Plac...
- Ingredients:
- 500 grams spaghetti pasta (cooked al dente)
- 1 pound chicken breast fillets (sliced into 1 inch chunks)
- For the chicken marinade:
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh rosemary, chopped (if using dried, use half of the amount)
- Zest of 1 lemon
- Juice of 1/2 a lemon
- 2 Tablespoons extra virgin olive oil
- 1 teaspoon coarse salt (not table salt)
- 1/2 teaspoon fresh cracked black pepper
- 2 Tablespoons extra virgin olive oil (to sauté the marinated chicken)
- Add all the marinade ingredients into the chicken and marinade for 20 minutes (if making this dish in pronto) or over night (if making this dish the next day… much better).
- Saute the marinated chicken in extra virgin olive oil until cooked (about 4-5 minutes) then set aside.
- For the garlic gravy:
- 1/2 stick (1/4 cup) unsalted butter
- 2 Tablespoons extra virgin olive oil
- 4 large cloves garlic, finely minced
- 2 Tablespoons all-purpose flour
- 2 1/2 cups chicken stock
- 1 Tablespoon fresh basil, chopped
- salt and pepper to taste
- 1/4 cup parsley, chopped (to sprinkle/finish the pasta)
- 1/2 cup grated parmesan cheese
- 2 cups whole cherry tomatoes
Butter Chicken Easy Recipe

Easiest one I've ever made
- Butter Chicken
- 1/4 cup butter
- 4 chicken breasts (or thighs)
- 1 Tbsp garam masala (spice mix found in the spice aisle)
- 1 tsp Paprika
- 1 tsp cinnamon
- 1 tsp sugar
- 1/2 tsp chili powder
- 1 Tbsp Madras curry paste (in a jar from the ethnic section)
- 1 Tbsp peanut butter (light)
- 1 can tomato soup (10oz heinz tomato soup is only think I use)
- 1/2 of the soup can filled with 10% cream
- 1/2 of the soup can filled with 1% milk (or whatever you have)
- 3/4 cup chicken broth (reduced sodium)
- 1/4 cup fresh cilantro'flat leaf parsley (cilantro sucks as far as i'm concerned)
