- 4 garlic cloves, smashed
- 2 small onions, quartered
- 2 to 3 tablespoons olive oil
- salt and fresh ground pepper, to taste
- 1/3 cup sliced fresh basil
- fresh basil leaves for garnish, optional
Butternut Squash and White Bean Soup

- 1 large garlic clove, minced
- 2 tablespoons extra-virgin olive oil
- 1/2 small butternut squash (1 lb), peeled, seeded, and cut into 1/2-inch pieces (2 cups)
- 1 3/4 cups chicken broth (14 fl oz)
- 2 cups water
- 1 (16- to 19-oz) can white beans (preferably cannellini), rinsed and drained
- 2 canned whole tomatoes, coarsely chopped
- 1 teaspoon finely chopped fresh sage
- 1 oz finely grated Parmigiano-Reggiano (1/2 cup) plus additional for serving
- 1/4 cup hulled green pumpkin seeds (not roasted; optional)
Chipotle Quinoa Fritters

Preparation In a medium saucepan, combine the quinoa and 2 cups of water
- 1 cup quinoa, rinsed and drained
- 3/4 cup finely chopped cauliflower
- 2 cloves garlic, minced
- 1 shallot, minced (about 2 tablespoons)
- 1/2 cup shredded mozzarella cheese
- 2 chipotle peppers, finely chopped plus 2 tablespoons adobo
- 1/4 teaspoon sea salt
- 2 15-ounce cans chickpeas (garbanzo beans), rinsed and drained
- 1 egg, beaten
- 2 cups bread crumbs
- oil for frying
- 1 cup plain non-fat Greek yogurt
- 1 lime, juiced
- 2 tablespoons adobo
Red cabbage

- 2 lbs red cabbage, finely shredded
- 4 tbsp butter
- 2 tbsp sugar
- 7 tbsp white wine viengar
- salt
- 1 1/2 tbsp green apple peeled, cored and grated
- 2 tbsp sultanas
- 4 tbsp red curren jelly\black pepper
- 2-3 sprigs tyme leaves picked
BUTTER AND GARLIC PORK WITH CRISPY FRIED GARLIC

Marinate pork tenderloin slices with the marinade ingredients for 20 minutes
- Marinade:
- 2 pounds pork tenderloin, sliced thinly
- 2 tablespoons oyster sauce
- 2 tablespoons worcestershire sauce
- 1 tablespoon garlic, finely minced
- 1 teaspoon cracked black pepper
- 1/2 teaspoon salt (optional and according to taste)
- ____________________
- 1/4 cup butter
- 1 tablespoon garlic, minced
- 2 Jamaican long red peppers, deseeded and sliced thinly
- 1/4 cup chives, sliced finely
- _______________
- 1 head garlic, minced finely
- 1/4 cup canola oil/vegetable oil
- fry garlic in oil until golden brown (but not burnt) and crispy. Set aside.
Peppy Cocktail Sauce

Combine all ingredients; chill
- 1/2 cup ketchup
- 1 teaspoon worcestershire sauce
- 1/2 cup chili sauce
- 1/2 teaspoon grated onion
- 3 tablespoons lemon juice
- 1/4 teaspoon salt
- 1 tablespoon horseradish
- 1/4 teaspoon liquid hot pepper sauce
Gooey Turtle Bars

- 1 recipe Shortbread Crust (recipe below)
- 1 3/4 cups (12.25 ounces) packed brown sugar
- 1/4 cup honey or light corn syrup
- 3/8 teaspoon salt (1/2 teaspoon for coarse or flaky sea salt)
- 1/4 cup water
- 4 tablespoons (1 stick) unsalted butter
- One 14-ounce can sweetened condensed milk
- 1 tablespoon pure vanilla extract
- 2 cups (7 ounces) whole pecan halves, toasted
- 6 ounces milk chocolate or semisweet chocolate, coarsely chopped, or 1 cup milk chocolate or semisweet chocolate chips
