Ginger Snaps

My special recipe. A camping staple
- 3/4 cup margarine
- 1 cup sugar
- 1/4 cup molasses
- 1 beaten egg
- 2 cups flour
- 1/4 tsp salt
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp cloves
- 1 tsp ginger
Potato Corn Chowder

In a large pot, fry bacon
- 1 tbsp oil
- 2 slices bacon - diced
- 1 medium onion - diced
- 1 small stalk celery - diced
- 1 large potato - diced
- 1 1/2 cups chicken broth
- 1 - 14 oz can (398 ml) cream corn
- 1 1/2 cups (375 ml) kernel corn
- 1 can (385 ml) evaporated milk (or a small can of evaporated milk with regular milk added to equal 385 ml)
- Salt, pepper and nutmeg
Au Gratin Potatoes

Slice peeled potatoes into a water filled pot and boil until just tender
- 2 pounds potatoes
- 1 medium onion, chopped
- 1/4 cup margarine
- 1 tbsp flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 cups milk
- 2 cups shredded sharp cheddar cheese
- 1/4 cup fine dry bread crumbs
- Paprika
Caesar Salad

Combine oil, garlic, worcestershire sauce, lemon juice, salt, pepper and egg white into a blending cup
- 2 small cloves garlic, minced
- 1/3 cup oil, preferably olive
- 1 pound romaine lettuce, well dried
- 1 egg white
- 3/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp lemon juice
- 2 tsp worcestershire sauce
- croutons
- 1/4 cup grated Parmesan cheese
Beef Teriyaki

Trim fat and bone from beef steak; cut beef across grain into 1/8 inch slices
- 1 1/2 pounds beef boneles top loin or sirloin steak
- 1/4 cup soy sauce
- 1/4 cup vegetable oil
- 2 tbsp dry white wine
- 1 tsp sugar
- 1/2 tsp ground ginger
- 1 clove garlic, crushed
- 1 tsp corn starch
- Rice
Maple Baked French Toast

Preheat oven to 350 degrees
- 6 slices white bread cubed
- 4 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 cups milk
Portuguese Kale and Potato Soup

With a fork, prick several holes in each sausage and place in a small skillet
- 10 oz uncooked chorizo sausage (or other lightly spiced, smoked sausage), about 3 medium
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 tsp smoked paprika
- 6 medium potatoes, peeled and cut into 1/2" cubes
- 4 cups beef or chicken broth
- 2 cups water
- 1 lb bunch kale
- 1/2 tsp slat
- 1/4 tsp pepper
- Portuguese piri piri sause (or other hot sauce) for garnish
Teriyaki Satay

Cut sirloin steak into thin strips (1/4 x 2")
- 2 lbs thinly sliced sirloin steak
- 1 tbsp finely chopped fresh ginger
- 2 cloves garlic, chopped fine
- 1 medium onion, chopped
- 2 tbsp sugar
- 1/4 cup soya sauce
- 1/2 cup water
Marble Crown Cake

Cream butter in a large bowl
- 2 1/2 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- 4 eggs, separated
- 1 cup butter
- 1 1/2 cups sugar
- 2/3 cups milk
- 1/8 tsp grated orange rind
- 1/4 tsp orange extract
- 1/4 cup dry cocoa
- 1/4 cup water
Roasted Red Pepper Hummus

Cut the top off of the head of garlic, exposing the cloves
- 1 whole head garlic
- 2 tsp oil
- 2 cans (16 oz each) chickpeas, drained and rinsed
- 1/2 cup roasted red peppers, drained
- Juice of 2 lemons (about 5 tablespoons)
- 1/4 cup tahini
- 2 tsp hot pepper sauce
- 1/2 tsp salt
- Pinch ground cumin
- chopped parsley, to garnish (opational)
- Pita wedges, for serving
