- 1 lb ground beef
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 cans (14 1/2 oz) beef broth
- 1 can (14 1/2 oz) diced tomatoes undrained
- 1 can corn, drained
- 1 1/2 c. picante sauce
- 1 c. spiral or shell pasta
- 2 tsp chili powder
- 1 medium green pepper, chopped
- 1 tsp dried parsley flakes
- 1 pkg taco seasoning
- Shredded cheddar cheese, sour cream and tortilla strips
Hummingbird Cake

1. Make the cake; Preheat the oven to 350 degrees
- For Frosting:
- Unsalted butter, for greasing
- 2 3/4 c. all-purpose flour, plus more for dusting
- 1 c. pecan pieces
- 3 ripe bananas, chopped
- 1/2 c. finely chopped fresh pineapple
- 1 tsp ground cinnamon
- 1/2 tsp freshly grated nutmeg
- 1/2 tsp ground ginger
- 1 1/4 tsp baking soda
- 1/2 tsp salt
- 3 large eggs, at room temperature
- 1 3/4 c. granulated sugar
- 1 c. vegetable oil
- 2 pkg cream cheese, (8 oz each) at room temperature
- 12 Tbsp unsalted butter, cubed, at room temperature
- 2 c. confectioner's sugar
- 1 Tbsp finely grated lemon zest
- 1 tsp vanilla extract
Angel Food Sheet Cake

- Vegetable oil cooking spray, for sheet and parchment
- 12 large egg whites, room temperature
- 1/2 tsp cream of tartar
- 1 1/4 c. superfine sugar
- 1 cup all-purpose flour

- Brioche Bread Pudding:
- 4 eggs
- 3/4 c. whole milk
- 3/4 c. heavy cream
- 1 tbsp vanilla extract
- 1 tsp lemonzest
- 1/2 c. sugar, plus more for dusting andtopping
- 4 large slices brioche bread
- 2 c. mixed berries (blueberries, strawberries, raspberies, blackberries), plus more for garnish.
- Lemon Fondant:
- 2 c. powdered sugar
- 2 tbsp water
- 2 lemons, zested and juiced
Asian Rice Salad with Shrimp

1. Whisk garlic , ginger, sesame oil, vinegar, soy, sauce and sugar in a large bowl
- 2 cloves garlic, minced
- 1 2" piece of ginger, peeled and grated
- 3 Tbsp toasted sesame oil
- 1/4 c. rice vinegar
- 2 Tbsp soy sauce
- Pinch of sugar
- 3/4 lb shrimp, peeled, deveined and halved lengthwise
- 1 large carrot, shredded
- 2 stalks celery, thinly sliced
- 2 c. snow peas, thinly sliced
- 1 Tbsp vegetable oil
- 2 c. cooked brown or white rice
- 1 bunch scallions, thinly sliced
- 1/4 head iceberg lettuce
- 1 c. mung bean sprouts
- 1/2 c. chow mein noodles and/or chopped peanuts

- 2 pkgs of mushrooms, sliced
- Steak of choice (Used 4 T-Bones)
- 1 stick of butter, melted

- Ketchup (used 1/2 bottle, approximately)

- 1 c. heavy cream
