Shrimp Salad pitas

1. Preheat the broiler. Soak the chopped onion in a bowl of cold water while you prepare the shrimp
- 1/2 small red onion, finely chopped
- 1 1/2 lbs medium shrimp, peeled, deveined and halved crosswise
- 2 Tbsp extra-vigin olive oil
- 1/2 tsp hot paprika
- Kosher salt and freshly ground pepper
- 1/2 c. 2% Greek yogurt
- 1 medium carrot, coarsely grated
- 1 Kirby cucumber, halved lengthwise, seeded and thinly sliced
- 1 Tbsp chopped fresh dill
- 1 lemon
- 4 whole-wheat pitas
- 8 Bibb lettuce leaves
Potato Gratin with Gruyere and Creme Fraiche

Preheat oven to 400 degrees
- 3 lbs Russet potatoes, peeled, cut into 1/8 inch thick rounds
- 1 1/2 c. creme fraich,* stirred to loosen
- 1 1/2 c(packed) Gruyere cheese (about 6 oz)
- 2 tbsp chopped fresh Italian parsley
Sausage Spaghetti Bake

Preheat oven to 375 degrees
- 1 pkg Bob Evans Farms Link Sausage (regular or Italian)
- 1 can (8 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1 can (4 oz) mushrooms, drained
- 1/2 tsp salt
- 1/2 tsp basil
- 4-6 oz spaghetti, cooked
- 1/3 c. shredded mozzarella cheese
- 2 tbsp grated parmesan cheese
Crustless Quiche

Preheat oven to 425 degrees with rack in middle
- 1 1/2 tbsp fine dry plain bread crumbs
- 1 c. frozen chopped onions
- 1 c. diced cooked ham (1/4 lb)
- 1 tbsp unsalted butter
- 1 (8 oz) pkg shredded Swiss cheese (2 cups)
- 4 large eggs
- 1 c. heavy cream
- 1 c. whole milk
Prickly Pear Iced Tea

Combine iced tea, lemonade and prickly pear syrup in a pitcher with ice
- 2 c. unsweetened iced tea
- 1 c. fresh lemonade
- 1/2 c.prickly pear syrup (available at specialty food stores, or use any fruit syrup)
- Lemon slices, for garnish
Creamy Buttermilk Coleslaw

- 1 large carrots shredded (only if not in bagged coleslaw
- 2/3 c. buttermilk
- 1/2 c. mayonaise
- 1/4 c. sour cream
- 8 scallions, chopped fine
- 2 tbsp sugar
- 1 tsp Dijon mustard

- Butternut Squash:
- Slice Slice squash slightly thicker than a potato chip
- Spray grill pan wiht Pam and light amount of olive oil.

- 24 Nutter Butter cookies
- 8 zo pkg cream cheese, softened
- 5 tbsp butter melted
- 1 c. creamy peanut butter
- 3/4 c. sugar
- 1 tbsp vanilla
- 1-8 oz Cool Whip, thawed, divided
Seared Scallops with Tarragon-Butter Sauce

Pat scallops dry and sprinkle with 1/4 tsp each of salt and pepper (total)
- 1 1/4 lb large sea scallops, tough ligament from side of each discarded
- 7 tbsp unsalted butter, cut into tablesppons, divided
- 2 tbsp finely chopped shallot
- 1/4 c. dry white wine
- 1/4 c. white wine vinegar
- 1 tbsp finely chopped tarragon

- 4 thick slices Italian bread, cut into cubes
- 1/4 c. olive oil
- Kosher salt and freshly ground pepper
- 1 Tbsp dijon mustard
- 1 Tbsp fresh lemon juice
- 2 Tbsp white wine vinegar
- 2 lbs mixed heirloom tomatoes, cut into chunks
- 1 bunch scallions, sliced
- 2 Tbsp chopped fresh dill
- 3/4 c. grated gruyere cheese
- 1 Tbsp all-purpose flour
