Combine first 8 ingredients in a bowl; let stand 20 minutes
- 1 c. fresh raspberries
- 2 c. fresh blackberries
- 2 c. hulled fresh strawberries, quartered
- 2 c. fresh blueberries
- 1/4 c. sugar
- 1 tbsp grated lemon rind
- 1 tbsp fresh lemon juice
- 1 tbsp limoncello (lemon flavored liqueur)
- 1/2 c. torn mint leaves

- Prosciutto Butter:
- 1 1/2 c.(3 sticks)unsalted butter, room temperature
- 6 tbps chopped hazelnuts
- 1 1/2 tbsp Sherry wine vinegar
- 1 tbsp chopped fresh thyme
- 2 tsp crushed black peppercorns
- 1 garlic clove, minced
- 3/4 tsp salt
- 9 zo thinkly sliced prosciutto, chopped
- 3 green onions, chopped

Bakewell Cream Biscuits

Bakewell Cream a traditional New England leavening agent, makes these biscuits rise high
- 4 c. all-purpose flour
- 1 tbsp plu 1 tsp Bakewell Cream (see note)
- 2 tsp baking soda
- 1 tsp salt
- 1/2 c. cold vegetable shortening
- 1 3/4 c. buttermilk

Excellent zucchini casserole
- 2 tbsp extra-virgin olive oil
- 5 medium zucchini (about 1 1/2 lbs) sliced legthwise, 1/4 inch thick
- Salt and freshly ground black pepper
- 1 c. heavy cream
- 1 c. grated mozzarella
- 1 c. grated fontina
- 1/4 c. grated Romano
- 1 c. plain dried bread crumbs
- 4 tbsp unsalted butter

Combine the graham cracker crumbs and butter in a bowl, mix well
- 7 reduced fat graham crackers, crumbled
- 1 1/2 tbsp light butter, melted
- 3/4 c. fresh lime juice
- 1 tsp grated lime zest
- 1 envelope unflavored gelatin
- 8 oz fat free cream cheese, softened
- 8 oz reduced fat cream cheese, softened
- 1 (14 oz) can fat free sweetened condensed milk
- 1 c. fat free sour cream
- 1 c. fat free whipped topping
- 1/2 c. confectioners' sugar
Seared Steaks with Porcinin Mushroom Cream Sauce

1. Heat 2 large skillets until veyr hot
- 2 tbsp extra virgin olive oil
- 6-1/2 lob New York strip steaks, cut 1 inch thick
- salt and freshly ground pepper
- 1/2 c. minced shallots
- 1-280 gram jar of preserved sliced porcini mushrooms in oil, drained
- 1/2 c. brandy
- 1/2 c. chicken stock
- 1/2 c. creme fraiche
- 1/4 c. chopped chives

- 1 bottle (12 oz) beer

- 3 eggs
- 1 1/2 c. flour
- 2 tsp baking soda

- Nut Topping:
- 1/2 c. sugar
- 1 c. walnuts, finely chopped
- 1/2 tsp cinnamon

- Kosher salt and freshly ground pepper
