Spinach Salad with Maple Dijon Vinaigrette

- 1/4 c. maple syrup
- 3 tbsp. minced shallots (about 1 medium)
- 2 tbsp red wine vinegar
- 1 tbsp canola oil
- 1 tbsp country-style Dijon mustard
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 garlic clove, minced
- 1 cup sliced mushrooms
- 1/2 c. vertically sliced red onion
- 1/2 c. chopped Braeburn apple
- 4 slices bacon, cooked and crumbled
- 1 (10-oz) pkg fresh spinach

Pumpkin Gooey Butter Cakes

- Cake:
- 1 918 1/4 oz) pkg yellow cake mix
- 1 egg
- 8 tbsp butter, melted
- Filling:
- 1 (8 oz) pkg cream cheese, softened
- 1 (15 oz) can pumpkin
- 3 eggs
- 1 tsp vanilla
- 8 tbsp butter, melted
- 1 (16 oz) box powdered sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
Peach Stuffed Port

Slice pitted peaqches 1/8 inch thick, and arrange in a single layer on parchment-lined baking sheets
- Peach Jam:
- 1 1/4 c. water
- 9 peaches, dried, or 6 oz store-bought dried peaches
- 1 boneless pork loin (2 1/2 lbs) trimmed
- Coarse salt and freshly ground pepper
- 1 pinch of ground cloves
- 1 tbsp all-purpose flour
- 1/2 c. Peach Jam (recipe follows)
- 1 tbsp light brown sugar
- 1 tbsp fresh lemon juice
- 3 1/2 lbs peaches (8 t 10) peeled, halved, pitted, and cut into chunks
- 1 1/4 lbs sugar (scant 3 cups)
- 1 tbsp plus 1 tsp fresh lemon juice
- Coarse salt
Passion Fruit Sangria

- 2 bottles dry white wine
- 3/4 c. brandy
- 1/2 c. Triple Sec
- 3/4 c. simple syrup (equal amounts sugar and water heated until sugar dissolves and cooled)
- 3/4 cup passion fruit puree
- 2 c. fresh orange juice
- 3 oranges, sliced into thin rounds
- 3 green apples, cored and sliced thinly
- 2 lemons, sliced into thin rounds
- 1 c. blackberries, washed and sliced in 1/2
Best Ever Meatloaf

Meatloaf with shredded cheese
- Topping:
- 2 eggs
- 2/3 c. milk
- 3 slices bread, torn into pieces
- 1/2 c. grated carrot
- 1/2 c. chopped onion
- 1 c. (4 oz) shredded cheddar or mozzarella cheese
- 1 tbsp chopped fresh parsley or 1 tsp dried
- 1 tsp salt
- 1 tsp dried basil, thiyme or sage (opt)
- 1/4 tssp pepper
- 1 1/2 lobs lean ground beef (best to use combination meatloaf mix)
- 1/2 c. tomato sauce
- 1/2 c. packed brown sugar
- 1 tsp mustard

- 2 tbsp sugar

Saute sausage and add pepper and onions
- 1 lb bulk Italian sausage (recommends Bob Evans hot)
- 1 green pepper
- 1 onion
- 1 can all beans - 1 lb
- kidney, lima, butter beans, green beans, black beans, pork n beans, chick peas
- Should use total 7-8 cans of variety
- 1 small can tomato paste
- 1 can water
- 1/4-1/2 c. brown sugar
- salt and pepper
- 1/2 jar mild salsa
- Cheddar cheese
