Potato-Sour Cream Biscuits

These savory treats are delicious alongside roats beef, chicken, or ham
- 8 oz. cubed peeled Yukon gold potato
- 1/2 c. low-fat buttermilk
- 1/4 c. reduced-fat sour cream
- 2 tbsp butter, cut into small pieces
- 1 3/4 c. all-purpose flour (about 7 3/4 oz)
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- Cooking spray
Cheesy Rice and Broccoli

- 1 pkg (10 oz) frozen chopped broccoli
- 3/4 c. water
- 1/2 lb Velveeta cheese, cubed
- 1 1/2 c. Minute Original rice, uncooked
Angel Biscuits

Excellent...old favorite Bake up to three weeks ahead
- 1 pkg active dry yeast
- 1/4 c. granulated sugar
- 1/4 c. warm water (105 degrees to 115 degrees)
- 5 1/2 c. all-purpose flour
- 1 tbsp baking powder
- 1 tsp each baking soda and salt
- 2 c. buttermilk or plain low-fat yogurt
- 1/2 stick butter (1/4 c) melted and cooled slightly
Butternut Squash Risotto

1. Heat broth in medium sized saucepan and keep warm over low heat
- 6-8 c, chicken broth (use vegetable broth for vegetarian option)
- 5 tbsp unsalted butter, divided into 4 tbsp and 1 tbsp
- 1 small onion, finely chopped
- 2 c. butternut squash, peeled, and finely diced
- 2 c. aborio rice (can substitute mediium grained white rice, but aborio is preferred)
- 1 c. dry white wine (such as Sauvignon Blanc)
- 1 c. freshly grated Paresan cheese
- 2 tbsp chopped chives or garlic chives
- Salt

Holiday Favorite!
- 1 (12 fluid oz) can frozen lemonade concentrate
- 1 ( 6 oz) can frozen orange juice concentrate
- 2 cups strong brewed black tea
- 1 c. white sugar
- 2 c. whiskey
- 7 c. water
- 1 liter ginger ale soda
- 2 lemons - cut into wedges, for garnish
Cosmopolitan Martini

Pour all ingredients in mixing glass half filled with ice, shake and strain into chilled martini glass
- 1/2 oz Cointreau orange liqueur
- 1 oz vodka
- juice of 1/2 lime
- 1 splash of cranberry juice

Preheat oven to 400 degrees
- 1/2 c. (1 stick) unsalted butter, melted, divided
- 2 c. yellow cornmeal
- 6 tbsp all purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 1/3 c. buttermilk
Coffee-Mallow Torte

1. In a medium bowl combine cookie crumbs and butter
- 2 c. crushed chocolate wafer cookies (about 35)
- 1/3 c. butter melted
- 2/3 c. hot fudge ice cream topping
- 1 tsp instant coffee crystals
- 1/2 of a 7 oz juar marshmallow creme
- 1-8 oz container frozen whipped dessert topping, thawed
- 1 qt coffee ice cream
- 1/3 chopped pecans, toasted
- 1 oz semisweet chocolate, grated (divided use)
- Pecan halves (optional)
Amaretto-Cranberry Kiss

- 2 c. cranberry juice cocktail
- 1 c. vodka
- 1/2 c. amaretto
- 3 tbsp fresh orange juice
- Ice cubes
- Clmentines, peeled, separated into segments
Quiche Lorraine Tartlets

- 1 pkg (15 oz) refrigereated pie crusts (2 crusts), softened according to package directions
- 2 eggs
- 1/2 c. half and half
- 1/8 tsp salt
- 4 slices cooked bacon
- 1/2 medium red bell pepper
- 2 tbsp finely chopped fresh chives or green onion
- 1/2 c. (2 oz) grated Swiss cheese
- 12 grape tomatoes
- Coarsely ground balck pepper
- Additional chopped fresh chives or geen onion (optional)
