Halve and seed squash. Slice 1/2-inch (1 cm) piece from each cut side; peel and dice
- 1 acorn squashes or large sweet dumpling squash, (2 lb/1kg)
- 1 1tsp (5 mL) vegetable oil
- 1/4 (50 mL) chopped oniononions
- 1/4 (50 mL) sweet green peppersweet green peppers
- 1 clove garlic , minced
- 1/2 tsp(2 mL) ground cumin
- 1/3 cup(75 mL) medium bulgar or coarse bulgar
- 3/4 cup (175 mL) hot vegetable stock
- 1/2 cup(125 mL) canned drained chickpea
- 1 tbsp(15 mL) lemon juice
- 1 tbsp(15 mL) chopped fresh parsley

- One 16-ounce package whole-wheat penne, or other pasta
- 2 tablespoons unsalted butter
- 1 onion, cut into slivers
- 1 small butternut squash (1 1/2 to 2 pounds), peeled, seeded, and cut into 1/2-inch dice
- 8 ounces shiitake mushrooms, stems removed, cut into 1/4-inch-thick slices
- 1/4 cup dry sherry
- 3 cups homemade or low-sodium canned chicken stock, skimmed of fat
- 3 ounces beet greens, from 1 bunch beets (or red or green Swiss chard), tough stems removed, cut into 1/2-inch strips
- 1 teaspoon coarse salt
- 1/4 teaspoon freshly ground pepper
- 2 ounces low-fat goat cheese, crumbled
Acorn Squash Soup with Kale

- 4 strips bacon, 4 ounces, cut crosswise into 1/2-inch pieces
- 1 medium onion, finely chopped
- 1/2 pound kale, thick stems removed, leaves finely chopped (about 8 cups)
- 4 cups Acorn Squash Puree, or 2 packages (12 ounces each) frozen winter squash puree, thawed
- Coarse salt and ground pepper
