- 1-1/2 lb. boneless skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup flour
- 1 pkg. (8 oz.) sliced fresh mushrooms
- 2 cups baby carrots

- 1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth

- 2 cups creamy peanut butter
- 1/2 cup butter or margarine, softened
- 2 cups powdered sugar
- 3 cups graham cracker crumbs
- 1/2 cup real semi-sweet chocolate chips
- 1 teaspoon shortening
- Sliced almonds
- Chow mein noodles
Strawberry Cream Cake

This recipe makes a very big 4-layer cake that will feed a lot of people
- Frosting -
- 2 8-oz packages of cream cheese, room temperature (I used low-fat)
- 1 cup (2 sticks) unsalted butter, room temperature
- 4 cups powdered sugar
- 1/2 cup seedless strawberry jam
- 3/4 cup chilled heavy whipping cream
- Cake -
- 3 cups cake flour
- 3/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3 cups sugar
- 1 cup (2 sticks) unsalted butter, room temperature
- 7 large eggs
- 2 TBSP vanilla extract
- 1 cup sour cream (I used low fat)
- 6 TBSP plus 1/3 cup seedless strawberry jam
- 2 1/4 lbs strawberries, hulled, sliced (about 6 cups), divided
