- 6 uncooked plain lasagna noodles (6 ounces)
- 6 uncooked whole wheat lasagna noodles (6 ounces)
- 1 pound lean ground beef
- 1 large onion, chopped (1 cup)
- 1 jar (14 ounces) tomato pasta sauce (any variety)
- 1 can (8 ounces) mushroom pieces and stems, undrained
- 1 container (15 ounces) ricotta cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
- 1 cup shredded mozzarella cheese (4 ounces)
- 1/4 cup grated parmesan cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 garlic cloves, finely chopped
- Additional grated parmesan cheese, if desired
Cornish Game Hens with Apricot Mustard Sauce

- Lemon and rosemary butter
- 3/4 cup butter
- 1 tablespoon grated lemon rind
- 1 tablespoon garlic, finely chopped
- 1 tablespoon chopped fresh rosemary
- Salt and freshly ground pepper to taste
- 4 Cornish hens, butterflied
- Sauce
- 2 tablespoons honey mustard
- 1 tablespoon apricot jam
- 1 cup chicken stock
- 2 tablespoons butter
Baked Eggplant Parmigiano

This is a no-fry version of eggplant parmigiano, prepared casserole-style
- 1-1/2 lb. eggplant (approx. 1 big eggplant), stem discarded, chopped into 1/2" dice (leave peel on)
- 3 plum tomatoes, peeled, seeded and diced (optional)*
- 2 cloves garlic, finely chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup tomato sauce
- 1 cup ricotta cheese
- 1 large egg
- 1-1/4 cups mozzarella, cut into 1/2" dice
- 1/3 cup grated Parmesan cheese (optional)
- 1/3 cup coarsely chopped fresh basil
- Salt and pepper to taste
- 1-1/2 cups fresh breadcrumbs
- 1 tbsp olive oil
- You can substitute 1 cup tomato sauce that contains chunks of tomato for the fresh tomatoes.
