- 3 tablespoons fennel seeds, crushed in plastic bag with mallet

- 2 tablespoons Dijon mustard
- 1 1/2 tablespoons soy sauce
- 1 tablespoon coarsely ground black pepper
- 1 1/2 teaspoons dried crushed rosemary
- Lamb
- 2 tablespoons olive oil
- 1 6- to 6 1/2-pound bone-in leg of lamb, well trimmed
- 2 cups dry red wine
- 1 1/3 cups low-salt chicken broth
- Fresh rosemary sprigs (optional)

- 3/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese

Heat oven to 350 degrees. Grease and flour square pan, 8 x 8 x 2 inches or 9 x 9 x 2 inches
- 1 1/2 c. cake flour or 1 1/4 c. all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. milk
- 1/3 c. shortening
- 1 egg
- 1 tsp. vanilla

- 1 lb. (450g) lamb, cubed
- 1/4 cup (60 ml) hoisin sauce
- 2 tbls (30 ml) light soy sauce
- 2 tbls (30 ml) rice wine vinegar (or white wine vinegar)
- 2 tbls (30 ml) olive or vegetable oil
- 2 teas (10 ml) grated fresh ginger
- 1 or 2 large mangos
