Cream Cheese Crater Cupcakes

Filling: In bowl, beat together cream cheese, sugar and vanilla; set aside
- Filling:
- 1/3 cup (75 mL) boiling water
- 1 tsp (5 mL) instant espresso powder
- 2 oz (57 mL ) bittersweet chocolate, chopped
- 1/4 cup (50 mL) buttermilk
- 1/4 cup (50 mL) unsalted butter, softened
- 2/3 cup (150 mL) granulated sugar
- 1 egg
- 1/2 tsp (2 mL) vanilla
- 1 cup (250 mL) all-purpose flour
- 1/3 cup (75 mL) cocoa, sifted
- 1/2 tsp (2 mL) baking soda
- 1/2 tsp (2 mL) baking powder
- 1 pinch salt
- 1/2 cup (125 mL) cream cheese, softened
- 1/4 cup (50 mL) granulated sugar
- 1/4 tsp (1 mL) vanilla

Hearty lentil curry gets a hint of tanginess from balsamic vinegar
- 1 small head cauliflower
- 400 -g pkg pre-cut butternut squash, about 3 cups (750 mL)
- 1 small eggplant
- 1 onion
- 2 tbsp (30 mL) Indian curry paste
- 680 -mL can tomato sauce
- 2 tbsp (30 mL) balsamic vinegar
- 2 tbsp (30 mL) brown sugar
- 19-oz (540-mL) can lentils or chickpeas, drained and rinsed
- 1 handful cilantro, chopped (optional)
Black Bean and Rice Salad

This salad is easy to make and provides a healthy dose of protein and complex carbohydrates
- Dressing:
- 1 (15 oz) can black beans, drained
- 3 cups cooked brown rice
- 1/4 cup red onion, chopped finely
- 1/4 cup chopped celery
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 3 tablespoons chopped cilantro
- 1/4 cup orange juice
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste

- Cookies:
- 1 * 1 cup butter, softened
- 1 * 1 package (3 ounces) cream cheese, softened
- 1 * 1 cup sugar
- 1 * 1 egg yolk
- 1/2 * 1/2 teaspoon Spice Island® Pure Vanilla Extract
- 1/4 * 1/4 teaspoon almond extract
- 2-1/4 * 2-1/4 cups all-purpose flour
- 1/2 * 1/2 teaspoon salt
- 1/4 * 1/4 teaspoon baking soda

Roasted-beet and grapefruit salad

- 1 large bunch beets, 4 to 5 beets
- 1 large grapefruit, preferably pink
- 2 tbsp (30 mL) each red-wine vinegar and prepared horseradish
- 1 tbsp (15 mL) olive oil
- 2 tsp (10 mL) honey
- 1/2 tsp (2 mL) salt
- 1/4 cup (50 mL) thinly shredded mint or chopped fresh parsley
