- 3 cups all-purpose flour
- 1 cup sugar
- 3 teaspoons baking powder
- 3/4 teaspoon salt
- 1 egg
- 1-1/2 cups milk
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup flaked coconut, toasted

I've decided to take advantage of the revoltingly rainy weather outside and do what I do best on rainy days
- 8 slices of bread, buttered and sliced into either triangles or soldiers
- (I use plain white, but you can use whatever bread you like best)
- 100 g raisins, currants or sultanas (or a mix of all three)

Nutty Snack Cakes

Preheat the oven to about 350 degrees
- 2 cups brown rice flour
- 8 ounces almonds, fine ground to a powder
- 2 teaspoons baking powder
- 3 high omega-3 eggs
- 4 ounces sucanat
- 2 ounces raw tahini
- 2 teaspoons almond extract
- 3 Tablespoons sesame seeds
- 1/2 teaspoon sea salt
Crab & Basil Bites

1. Stir mayo with chives, basil, lemon juice, pastis, salt and pepper in a medium bowl until combined
- 2 tbsp mayonnaise
- 1 tbsp chives, snipped
- 12 basil leaves, chopped
- 1 tbsp lemon juice
